I know, pretty much every other recipe I post here is some sort of brownie variation. Brownies are my all-time favorite dessert, so they will keep on coming. These COSMIC PROTEIN BROWNIES are actually from a few weeks ago. I posted them on Instagram, and decided I would post the recipe here as well.
So, here we go with the Cosmic Protein Brownies
I have been making a ton of brownie recipes lately, which have involved a lot of recipe testing with some new protein pancake and baking mix that I will be coming out with later this year. I also have a good friend who eats cosmic brownies like it is his job, so I decided to make a healthier, protein-packed version.
The base of the brownie recipe is almost the exact same as my Mint Chocolate Protein Brownies that I posted last week. Then, obviously I changed up the frosting a bit to make it just a chocolate protein frosting, with the addition of sprinkles. You can’t have cosmic protein brownies without sprinkles right?
2 parts: Brownies and Frosting
Brownies
For the brownies, I used a lot of the standard ingredients that any old brownie recipe would use. Flour, cocoa powder, brown sugar, etc. However, I also made some changes. The brown sugar is actually a sugar free version from Swerve. It tastes, and bakes like regular brown sugar, but none of the sugar or calories!
Next, of course, since they are protein brownies I added a total of 3 scoops of protein. I used a combination of whey protein and casein protein. I find that by using some of both, the end result is way better than just using one or the other. Whey protein tends to dry out really easily, so I definitely don’t recommend just using whey protein. I used 2 scoops of my favorite vanilla casein, and 1 scoop of vanilla whey protein.
Chocolate Frosting
And, of course you can’t have cosmic brownies without the delicious chocolate fudge frosting on top. I made a protein frosting consisting of chocolate protein powder, cocoa powder, peanut flour, Swerve confectioner’s sweetener, and a little bit of vanilla extract.
I hope you guys enjoy these brownies as much as I do. I have found that baking has been a good way to keep myself busy during the Coronavirus quarantine time. I like to call it a bit of quarantine cooking!

Ingredients
Instructions
- Preheat oven to 350F.
- Mix all dry brownie ingredients in a large bowl. Mix wet ingredients in a separate bowl. Combine wet and dry ingredients and gently stir until a smooth batter is formed. Fold in chocolate chips.
- Pour batter into a greased 8×8 glass baking dish. Bake at 350F for about 20-25 minutes. The center should still be slightly under-done to keep the rest of the brownies from drying out.
- Once baked, let completely cool. Mix all chocolate frosting ingredients in a large bowl. Spread over cooled brownies. Sprinkle the top with sprinkles. Cut into 16 brownies and enjoy!
Notes
*Swerve brown sugar is a sugar free brown sugar alternative. It can be found in the baking aisle of most grocery stores or here on Amazon. If you don’t have it, you can just use regular brown sugar, but calories and sugar will be much higher.
**Light butter has only 4g of fat per tbsp. compared to 11-12g of regular butter. This is found where all the regular butter is found in the grocery. Regular butter or coconut oil can be substituted, but will raise fat and calories.
