This past weekend, I decided that I would make myself a pre-birthday, birthday cake. But, I didn’t just make it because it was almost my birthday. I mostly made it because I love cake! And, since I really love chocolate, I had to have chocolate in this cake. I went with a butterscotch chocolate chip protein cake.Ā
I have very rarely make things that are butterscotch flavor. I definitely need to make this flavor more often. I forget how amazing it is. The butterscotch flavor comes from using some caramel extract in the cake and then topping it with sugar free butterscotch pudding.
Amazingly, this whole cake has nearly 40 grams of protein. I used my MusclePharm vanilla combat protein powder which has awesome flavor and a quality blend of proteins. I also had to use some chocolate in this recipe becauseĀ can’t live without chocolate. There are mini chocolate chips in the batter and on top. I melted some more and drizzled it over the top. It was delicious!
Butterscotch Chocolate Chip Protein Cake

Description
Moist and fluffy caramel chocolate chip protein cake frosted with sugar free butterscotch pudding and topped with more chocolate.
Ingredients
- 1/4 cup + 2 tbsp. (45g) whole wheat flour
- 1 scoop (33g) MusclePharm vanilla combat protein powder
- 1 tbsp. granulated stevia or erythritol
- 3/4 tsp. baking powder
- cinnamon to taste
- 3 tbsp. milk (any milk is fine)
- 1 whole egg
- 1/4 cup (62g) canned pumpkin*
- 1/16 tsp. caramel or butter extract (optional)
- 1 container sugar free butterscotch pudding
- 1 tbsp. (15g) chocolate chips, divided
Instructions
- Mix flour, protein powder, stevia, baking powder and cinnamon. In a separate bowl mix milk, egg, pumpkin, and caramel extract. Combine wet and dry ingredients.
- Fold in 1/2 of the chocolate chips. Pour batter into a microwave safe bowl. Microwave for about 1:30. Be careful not to over cool or it will be come very dry.
- Let cool completely. Spread pudding evenly onto cake. Melt the other 1/2 of the chocolate chips in the microwave and drizzle cake with melted chocolate.
- Top with more chocolate chips if desired and enjoy!
Notes
*Can substitute pumpkin for an equal amount of applesauce, Greek yogurt, or mashed banana. Texture will be slightly different.
