Chocolate Peanut Butter Cup Protein Mug Cake

A couple days ago I got quite a nice surprises in the mail. PES was kind enough to send me a sample pack of their 6 flavors of their select protein. Obviously I couldn’t wait to dig in and try one of them. It just so happens that they have a peanut butter cup flavor. And it also just so happens that I had 2 miniature peanut butter cups left in my pantry.

So, the only right thing for me to do with those two ingredients was make a chocolate peanut butter cup protein mug cake. You all know how much I lobe chocolate and peanut butter together. Basically, I was the happiest person in the world while eating it. I definitely need to make another one ASAP!

For the mug cake, I used the peanut butter cup protein powder, cocoa powder, and whole wheat flower. That way the cake had both chocolate and peanut butter flavors going on. And then for the toppings, you know I had to go overboard. I put a spoonful of melty natural peanut butter, mini chocolate chips, and a couple chopped up peanut butter cups! It was heavenly!

Serves: 1 cake
Healthy and delicious chocolate peanut butter protein mug cake topped with a drizzle of creamy peanut butter, chocolate chips, and mini peanut butter cups.
Ingredients
  • 1/4 cup (30g) whole wheat flour
  • 1 scoop (32g) PES peanut butter cup protein powder
  • 1 tbsp. (5g) unsweetened cocoa powder
  • 1/2 tsp. baking powder
  • sweetener to taste (optional)
  • 1 whole egg
  • 6 tbsp. pumpkin puree (Greek yogurt, applesauce, mashed banana, etc.)
  • 6 tbsp. milk (I used unsweetened almond)
  • 1 tbsp. (16g) natural peanut butter
  • 1 tsp. mini chocolate chips
  • 1 mini peanut butter cup
Instructions
  1. Mix flour, protein powder, cocoa powder, sweetener, and baking powder. Add egg, pumpkin, and milk to bowl. Gently mix everything together until well combined.
  2. Spray a large mug with cooking spray. Pour batter into mug. Microwave for 2:00. Cooking time may be more or less depending on microwave and variations in ingredients. I left mine a little uncooked in the middle and it was awesome!
  3. Top cake with 1 tbsp. natural peanut butter, 1 mini peanut butter cup, and some mini chocolate chips. Enjoy!
