I really love cake. It is pretty hard for me to control myself when I’m around a good piece of cake. A few friends and I smashed 4 pieces of cake this weekend, after eating a huge meal of Mexican food! So, I decided to make this Microwave Pumpkin Protein Cake that you can indulge on without any guilt!
So, in my opinion, all cake is good. But, cake that you can make in a microwave in a couple minutes is even better. That is where my friends at Lil Buff come in. After I made the cake, I topped it with a protein pumpkin peanut butter sauce. It is basically just vanilla protein powder, pumpkin, peanut butter, and some almond milk. Lastly, I sprinkled the cake with the sprinkles that came with the Lil Buff cake mix.

Description
Delicious, fluffy pumpkin spice protein cake topped with a creamy pumpkin peanut butter protein frosting. This cake is the perfect recipe for amazing fall flavor!
Ingredients
Pumpkin Cake
1 package Lil Buff Pump-It-Up Protein cake mix
1/2 cup canned pumpkin puree
1 egg white
2 tbsp. cashew milk
Pumpkin PB Sauce
1/3 scoop vanilla whey protein powder
2 tbsp. canned pumpkin puree
1 tbsp. natural peanut butter, melted
2 tbsp. cashew milk
sweetener to taste (optional)
Instructions
- Add Lil Buff pumpkin protein mug cake mix, canned pumpkin , egg white, and cashew milk to a bowl. Mix until a smooth batter forms.
- Spray a mug with nonstick spray. Pour batter into mug. Microwave for 2:30. May need a little more/less time depending on microwave. I checked at 1:30, then microwaved for another 1 minute.
- Next, mix pumpkin peanut butter protein sauce. Add all ingredients to a small bowl and mix until a smooth mixture is formed.
- Top cake with pumpkin peanut butter sauce, and sprinkles from the mug cake mix. Enjoy!
