Whenever I am hungry and want something filling but also quick, microwave protein cakes are my recipe of choice. They are quick, easy to make, filling, packed with protein, and of course delicious. This time, I went away from my love of chocolate and made a mixed berry protein cake.
Lately when I have used berries in recipes, I heat them in a pan with a little maple syrup to make a really tasty sauce/jam for the top. Just heat the berries, add the syrup, and simmer for about 5 minutes. The longer you let it cool once done cooking, the thicker and more jam-like it will be. Of course I was too hungry, so I added it onto the cake and devoured it pretty quickly.
Since I didn’t really have chocolate showing up anywhere in this recipe I had to compensate. I added my other favorite thing in the world, peanut butter. I drizzled on some of Nuts ‘N More’s original protein peanut butter. I have to say, peanut butter and berries go really well together. I’m going to have to use that combination more often.
To give even more berry flavor, I also chopped up a MusclePharm white chocolate raspberry combat protein bar and added it to the top. I think this it is my new favorite protein bar out there. The combination of white chocolate and raspberry is amazing. Not to mention it has 20 grams of protein, 12 grams of fiber and only 5 grams of sugar. You really can’t beat that.

Ingredients
Cake
- 1/4 cup (30g) whole wheat flour
- 1 scoop (33g) MusclePharm vanilla combat protein powder
- 1 tbsp. granulated stevia or erythritol
- 1/2 tsp. baking powder
- 1/4 cup milk (any milk will work)
- 1 whole egg
- 1/4 cup (56g) plain nonfat Greek yogurt
- 2 tbsp. (20g) frozen mixed berries
Berry Topping
- 1/3 cup (50g) frozen mixed berries
- 2 tbsp. sugar free maple syrup
- 1/3 MusclePharm white chocolate raspberry combat protein bar
Instructions
- Mix flour, protein powder, stevia, and baking powder in a bowl. Mix milk, Greek yogurt, and egg in a separate bowl. Add wet ingredients to dry and gently mix until combined. Fold in the 2 tbsp. of mixed berries.
- Spray a bowl with nonstick spray. Pour batter into bowl. Microwave for about 1:30.
- For the berry topping, heat a small pan to medium heat. Add 1/3 cup of frozen berries and maple syrup. Let simmer for about 5 minutes then turn off the heat and let cool a little before adding on top of pancakes.
- Lastly, add pieces of a chopped up white chocolate raspberry protein bar and a drizzle of peanut butter. Enjoy!
