I have recently started cooking with casein protein and it has worked really well. Especially for mug cakes and microwave cakes. It keeps the cake super moist. The texture is simply amazing.
However, I have not quite got the feel for baking with casein protein yet though. I guess that will come with time and many more failed recipe attempts. Yes, I have had many failed recipe attempts. I guess they can’t all be great. The casein that I use is Musclepharm combat casein. I have never once been disappointed with any of their products.
Anyway, back to the cake you are probably drooling over. Peanut butter protein cake filled with my favorite dairy free and gluten free mini chocolate chips from Enjoy Life. Is it bad that I sometimes just eat these chocolate chips straight from the bag? No it’s not bad at all. Everyone does it once in a while.
Peanut Butter Chocolate Chip Protein Cake

Description
Moist peanut butter chocolate chip microwave protein cake topped with more mini chocolate chips and natural peanut butter.
Ingredients
Cake
- 1/4 cup (30g) whole wheat flour
- 2/3 scoop (20g) Musclepharm vanilla casein protein powder
- 1 tbsp. (6g) peanut flour
- 1/2 tbsp. granulated stevia
- 1/2 tsp. baking powder
- 1/2 cup unsweetened almond milk
- 1 whole egg
- 1/4 tsp. vanilla extract
- 2 tsp. (10g) mini chocolate chips
- 1 tbsp. (16g) natural peanut butter (for topping)
Instructions
- Mix whole wheat flour, protein powder, peanut flour, stevia and baking powder in a bowl. In a separate bowl, add unsweetened almond milk, egg, and vanilla extract. Mix wet and dry ingredients together. Batter should be thick. Fold 1 tsp. mini chocolate chips into batter. Spray a small bowl or mug with cooking spray. Microwave for 60 seconds. Check and then microwave for another 30 seconds or until cooked to desired amount. Top with remaining chocolate chips and natural peanut butter.
