Mint Chocolate Protein Brownies

Ok, you all now how obsessed I am with protein brownies. Or any brownies for that matter. Heck, it doesn’t even need to be brownies. Give me chocolate and I will be happy. So, it’s safe to say I was happy with these MINT CHOCOLATE PROTEIN BROWNIES.

Mint chocolate protein brownies = better than Thin Mints!

Is anyone here a fan of girls scout cookies? Because I was inspired by Thin Mints when making these. Come to think of it, I should have crushed up some Thin Mint cookies in there. Unfortunately, I ate the whole box too quickly. So, I made this mint chocolate protein brownies to make up for it.

Anyway, I am not always the biggest fan of mint flavored things. I will eat it, but it wouldn’t normally be my first choice. But, Thin Mints are my favorite girl scout cookie, and these were basically Thin Mints in brownie form.

Brownie Recipe (more brownies here!)

The brownie recipe is one that I have been testing for a while with different variations. I am in the process of creating my own MACROCHEF protein baking mix, and this recipe was part of the development. It’s not what I will be using for the baking mix when it comes out, but these brownies turned out pretty dang good anyway.

2 different kinds of protein

Whey: The whey protein adds to the protein content, and helps balance out the texture. I used this whey in the recipe, but pretty much any whey should work.

Casein: Casein is one of my favorite proteins to bake with. This is because it gives a more dens, moist texture, and does not dry out like whey protein. Perfect for a fudgy textured brownie! Again, this is the casein I used in the recipe, but any chocolate/vanilla casein will work just fine.

Mint Chocolate Peanut Butter Frosting

After making these brownies, I had to add the mint chocolate frosting. This is what really made the texture and flavor stand out, and gave them that Thin Mint cookie flavor.

I used Nuts-N-More Mint Chocolate Chip peanut butter with some greek yogurt, and a few other ingredients to make the delicious, creamy frosting. If you like peanut butter as much as me, check out the rest of the flavors they have!
