It is kind of funny how I decided to make Oreo protein cupcakes. I was just looking through the desk drawers and when I opened one of them, there was a bag of mini Oreos. I decided to take that as a sign that I should make a recipe with Oreos in it.
For the cupcakes, I decided to keep it pretty simple and just make them chocolate. I used chocolate milk combat powder, cocoa powder, and sugar free dark chocolate chunks. You could also use cookies and cream combat powder. I’m sure it would be awesome if not better than chocolate!
I had to improvise a little for the frosting because I didn’t quite have all the ingredients I normally would have used. The frosting is made from vanilla Greek yogurt, reduced fat cream cheese, sugar free white chocolate, crushed up Oreos, and coconut flour. The coconut flour is just there to help thicken the frosting so that it doesn’t droop all over the place.
Now my only problem is going to be that I need to figure out how to eat all of these cupcakes before I leave for Canada on Friday. I have a 6 day/7 stage race starting Tuesday. It will be my first international race I have done against some of the best 17-18 year old cyclists in the world!

Cupcakes
- 1/2 cup + 2 tbsp. (75g) whole wheat flour
- 1 scoop (35g) MusclePharm chocolate milk combat protein powder
- 1/4 cup + 2 tbsp. granulated stevia or erythritol
- 3 tbsp. (15g) unsweetened cocoa powder
- 3/4 tsp. baking powder
- 1/4 cup milk (any milk is fine)
- 1/2 cup (113g) natural applesauce (or Greek yogurt, pumpkin, mashed banana)
- 1 whole egg
- 2 tbsp. (28g) dark chocolate chunks
Frosting
- 2/3 cup (150g) vanilla Greek yogurt
- 1/4 cup (62g) reduced fat cream cheese, softened
- 2 tbsp. (28g) white chocolate chunks, melted
- 2 tbsp. (14g) coconut flour
- 5 mini oreos with creams removed
- 6 mini oreos (for topping)
Instructions
- Preheat oven to 350F. Mix flour, protein powder, cocoa powder, stevia, and baking powder. Add milk, applesauce, and egg to a separate bowl. Mix well. Combine wet and dry ingredients. Fold in chocolate chunks.
- Put 6 muffin liners in a muffin tin. Evenly spoon batter into each of the 6 spots. Bake for 15-18 minutes or until a knife comes out clean. Once done, let completely cool.
- Add cream cheese, Greek yogurt, melted white chocolate and coconut flour to a medium bowl. Mix well. Crush up mini oreos with creams removed. Mix into frosting.
- Put frosting into a piping bag. Pipe frosting onto each of the 6 cooled cupcakes. Top each with a mini oreo. Enjoy!
