OK. I am getting wild. I swear this is why I shouldn’t buy Oreos, because then I start doing things like these Oreo Stuffed Protein Brookies. I will literally go through a whole package of Oreos in a few days just doing things like this.
Brownie, Cookie Dough, Oreo, Cupcakes, and Protein? Ohhhh yes.
The last recipe I made was Peppermint Oreo Protein Cupcakes, and now these. I am not really sure why all at once I have found the need for excess amounts of Oreos and cupcakes lately!
Anyway, this recipe is literally just a culmination of products I have that I started experimenting with, adding layers, and then I ended up with this. If you could put all the flavors I love into one, then it would be this recipe. The only thing I am really missing is peanut butter!
Bottom Cinnamon Cookie Layer
The bottom layer is a cinnamon, cookie crumble type of layer. I used ABS Protein Pancakes cinnamon flavor. If you haven’t tried these, they are awesome. I combined it with some coconut flour, light butter, and almond milk. After mixing the dough together, I pressed it into the bottom of each of the 8 muffin spots.
Middle Oreo Brownie Layer
Next, in the middle, is the gooey brownie layer with a double stuff Oreo in the center. For added protein, I used a couple of scoops of chocolate casein protein powder. I prefer baking with casein, especially when trying to make a gooey brownie like this.
Cookie Dough Topping
Finally, as if it wasn’t already delicious enough, I topped each with some chocolate chip protein cookie dough. For this, I used Protein Cookie Butter powder. It is a new product I’ve been using. It’s low fat, and you just add water and it mixes into a delicious cookie dough! The flavor I used was Golden Sandwich Cookie.

Description
Cinnamon protein cookie layer topped with a gooey, Oreo stuffed protein brownie layer and then finished off with chocolate chip protein cookie dough!
Ingredients
Instructions
- Preheat oven to 350F.
- Mix all crust ingredients together in a small bowl. It should have crumbly texture. Spray a muffin pan with nonstick spray. Press crust evenly into 8 spots in the muffin pan.
- Add all brownie layer ingredients, except for Oreos, to a food processor. You can also mix by hand but food processor is quicker and easier. Process until a thick, smooth brownie batter forms.
- Scoop about 1/4 cup of brownie batter over top each of the 8 crusts. Press an Oreo into each one. Top with remaining batter to cover Oreo.
- Bake at 350F for about 15 mins. They should seem slightly under-done and gooey in the middle. This will prevent them from baking too long and drying out. Let completely cool.
- While brownies are cooling, add cookie butter powder and almond milk to a bowl. Mix until a a thick dough forms. Fold in chocolate chips. Place cookie dough in the fridge for about 10 minutes to thicken while the brownies continue to cool.
- Top each brownie with about 2-3 tbsp. of cookie dough. Enjoy!
