It seems like I don’t make cookies enough. It is really a shame because cookies are delicious. Especially these chocolate almond sandwich cookies. Nutty almond butter protein cookies filled with a chocolate protein cream. Now that is a cookie I could get used to eating.
These were originally just going to be almond butter protein cookies, but then I decided that I needed to make them more exciting. Don’t get me wrong, the cookies themselves taste awesome, but when you add chocolate cream to the middle it takes it to a whole new level. And yes, I do realize that they very closely resemble a hamburger. Whoops! When you taste them though, you will not have any trouble distinguishing this sweet delicious cookie from a hamburger!
The cookies are really easy to make and there is no need for a mixer. The chilling time for them is only about 20-30 minutes so you won’t have to wait too long before you get your hands on them. Or if you are like me, you just might sneak a bit of the batter into your mouth because it is just too hard to wait until the cookie is baked! Be careful because the cookies only take 7-8 minutes to cook. If you cook too long, when they cool, they will be hard and very dry. They may look a little under done at 7-8 minutes but they will continue to cook and harden a bit when you take them out of the oven.
For a sandwich cookie, these babies pack a nice amount of protein. Definitely more than any cookie you will ever find in the store. Each cookie has about 10 grams of protein. I really can’t find a reason not to eat these cookies. I mean seriously. They are ;ow sugar, healthy, and packed with protein.
Of course all that protein comes from my favorite Musclepharm protein powders. I used vanilla combat powder in the cookies and chocolate casein in the cream filling. I would not recommend using whey protein for the filling because it is not as thick as casein and your filling will be too runny.

Nutty almond butter protein cookies filled with chocolate protein cream. These healthy cookies pack over 10 grams of protein and less than 5 grams of sugar.
Ingredients
Almond Butter Protein Cookies
- 1/2 cup (160g) natural creamy almond butter
- 2 scoops (67g) Musclepharm vanilla combat protein powder
- 1/2 cup (56g) coconut flour
- 1/4 cup (30g) whole wheat flour
- 3 tbsp. (21g) stevia/sugar baking blend (more if you like the cookie sweeter)
- 1 large whole egg
- 1/2 cup natural applesauce
- 1/8 tsp. baking powder
Chocolate Cream Filling
- 1/2 cup (113g) plain nonfat Greek yogurt
- 1 scoop (32g) Musclepharm chocolate casein protein powder
- 1 tbsp. (5g) unsweetened cocoa powder
- 1/4 cup granulated stevia/erythritol
- 2–3 tbsp. of milk or water to get the right cream consistency
Instructions
- Add almond butter, egg, stevia/sugar blend, and applesauce to a medium bowl. Mix with a fork until well combined. In a separate bowl combine protein powder, coconut flour, whole wheat flour, and baking powder. Mix dry ingredients. Combine wet and dry ingredients and mix together to form a thick cookie batter. You will have to use quite a bit of muscle because the batter is really thick.
- Turn oven on and preheat to 350F while batter is chilling. Chill batter in fridge uncovered for 20-30 minutes. Once chilled, spoon cookie dough onto a prepared cookie sheet to make 24 balls about 1 tbsp. each. Gently press each cookie dough ball down to flatten slightly and shape into a circle. Bake for 7-8 minutes.
- Mix Greek yogurt, casein protein, cocoa powder, and stevia. Add water or milk and mix until a smooth creamy consistency. Once cookies are cooked and cooled, place about 1 tbsp. of filling onto the bottom of 12 cookies. Add the other 12 cookies to each of the cookies with cream to make 12 sandwich cookies. Enjoy!
Notes
Store cookies in refrigerator. They should not be left out because the filling is Greek yogurt and will turn bad if not refrigerated.
