I came home from my cycling race last night really hungry and craving something chocolate mint flavored. Well to be honest, I am always craving chocolate, but this time it was chocolate mint. I started rummaging through the pantry and came to the decision of making some mint chocolate chip mini protein pies.
It worked out perfectly that I received a nice package from Yup Brands. They sent me some of their awesome high fiber B-Up protein bars. It just so happened that there was a mint chocolate chip one in there. Perfect! These bars are awesome. They have 20 grams of fiber per bar, 20 grams of protein, and only 2 grams of sugar. Protein bars don’t get much better than that. And besides the awesome nutritional profile, they taste absolutely amazing!
They have the texture that typical high fiber bars such as Quest bars so they are really easy to shape and make almost anything you want out of them. It was really easy to to shape them into the crust for the pies. Of course I had to have something to fill that crust so I whipped up a mint chocolate chip protein cream filling.
To take it even further with the chocolate mint flavor I drizzled each one with some dark chocolate mint coconut butter from Sweet Spreads. If you like chocolate and mint together, this is the healthy dessert you have always been waiting for.
It has been a really busy weekend, but it couldn’t have been better. It was full of cycling and yummy cooking. On Saturday I had a bike race and got my first win of the year! Today I went on another ride and was on the bike for a little over 70 miles in some beautiful weather. No other way I would rather spend my weekend!

Description
Healthy mint chocolate chip protein pies topped with dark chocolate mint coconut butter and packed with protein and fiber.
Ingredients
- 1 B-Up mint chocolate chip protein bar
- 1/4 cup (56g) plain nonfat Greek yogurt
- 1/3 scoop (12g) mint chocolate chip protein powder
- 1 tbsp. (16g) dark chocolate mint SweetSpreads coconut butter
Instructions
- Preheat oven to 350F. Cut protein bar into 4 even sized pieces. Microwave for about 30 seconds to soften. Press into 4 spots in a mini muffin pan. Bake for 5 minutes. The bar will start to puff up while baking so half way through take it out of the oven and press it down. Once finished baking, carefully press down again.
- Add protein powder to Greek yogurt and mix until smooth. Put shaped crusts into fridge or freezer for a few minutes to cool down. Fill each with about 1 tbsp. of the Greek yogurt mixture.
- Drizzle with dark chocolate mint coconut butter and enjoy.
