There is just something about banana bread that always gets me. When I make it, it certainly takes some self control not to eat the whole loaf at once. I mean, if you don’t cut the loaf into slices, then the whole thing is technically just one slice right? Well, this time I made these Blueberry Banana Bread Protein Donuts so I didn’t exactly have the choice to eat the whole loaf. And, let’s be honest, it is a lot more fun to eat donuts than bread!
I was initially just going to make these regular banana bread protein donuts, but then I saw the blueberries in the fridge and figured why not make it a blueberry banana bread protein donut recipe? I was thinking back to my Blueberry Banana Bread recipe I made a while ago and remembered how delicious it was. Blueberries and banana are such an amazing combo.
For the donuts, I used BSN Syntha-6 vanilla protein powder. It is a protein powder blend, so it works really well when baking. Sometimes just straight up whey protein can try out easily. Once the donuts were baked, I figured that I would add a little bit of a vanilla glaze/icing. It can’t be a donut without some sort of icing!
For that icing, I used some more protein powder and mixed it with a little bit of Greek yogurt, almond milk, and sweetener to taste. Once the donuts cooled, I dipped each of them in the glaze and tried not to eat them all at once!

Description
These blueberry banana bread donuts are the perfect combination of banana bread and a delicious blueberry donut, but healthy and protein-packed!
Ingredients
Donuts
- 1/2 cup flour
- 2 scoops Syntha-6 Vanilla Ice Cream protein powder
- 1/2 tsp. baking powder
- cinnamon to taste
- 1/4 tsp. salt
- 1 large ripe banana (mashed)
- 1 whole egg
- 1/4 cup nonfat plain Greek yogurt
- 2 tbsp. olive oil
- 1/4 tsp. vanilla extract
- 2 tbsp. Truvia baking blend*
- 3/4 cup frozen blueberries
Icing
- 1 1/2 scoops Syntha-6 Vanilla Ice Cream protein powder
- 3 tbsp. milk
- 1 tbsp. Greek yogurt
- sweetener to taste (optional)
Instructions
- Preheat oven to 350F.
- Add flour, protein powder, cinnamon, baking powder and salt to a large bowl. Mix.
- In a separate bowl add mashed banana, egg, Greek yogurt, olive oil, vanilla extract and Truvia sweetener. Mix.
- Combine wet and dry ingredients. Gently stir together until a smooth batter forms. Fold in blueberries.
- Spray 2, 6-spot donut pans with nonstick spray. Pour batter into a gallon ziplock bag. Cut the tip off and use the bag to pipe the batter into the prepared donut pans. I made a total of 9 donuts.
- Bake for 12-14 minutes or until a knife comes out clean. Once done baking, take out of oven and let completely cool.
- Mix all icing ingredients in a small bowl. Dip each of the cooled donuts in icing. Enjoy!
Notes
*Truvia baking blend is a stevia/sugar mixture. It has 1/2 the sugar of regular granulated sugar, but it is sweeter so you don’t have to use as much. It can be found in the baking aisle of most grocery stores. If you can’t find it, you can use 1/4 cup regular granulated sugar.
**Fresh works as well too, I just only had frozen blueberries on hand.

Question…which protein powder do you like the most for baking? Mine dries out the baked good! Thanks for you help!

Hi Anna! Thanks for the comment. It depends on the recipe. When you bake with whey protein, it can certainly dry out easily. Casein doesn’t dry out near as much, but it also absorbs liquid different and you will need to add different amounts of milk/water compared to a recipe that uses whey. I hope that helps!
