Healthy and delicious cinnamon roll protein muffins filled with a cinnamon swirl and topped with vanilla coconut butter icing to make the perfect guilt-free cinnamon roll.

Ingredients
Cinnamon Muffins
  • 1 cup (80g) old fashioned oats
  • ¾ cup (90g) flour (oat or whole wheat)
  • 6 tbsp. granulated/preferred sweetener
  • 1½ tsp. cinnamon
  • 1 tsp. baking powder
  • 2 large eggs
  • ½ cup natural applesauce
  • ¼ cup milk (any milk is fine)
  • 1 tbsp. oil
  • 1 tsp. vanilla extract
Cinnamon Swirl Mixture
  • 1 tbsp. coconut oil, melted
  • 2 tbsp. brown sugar
  • 1 tsp. cinnamon
Icing
  • 2 tbsp. vanilla coconut butter
  • 1 tbsp. milk (any milk is fine)
  • sweetener to taste
Instructions
  1. Preheat oven to 350F. Mix oats, flour, sweetener, cinnamon, and baking powder in a bowl. In a separate bowl, mix eggs, applesauce, milk, oil, and vanilla extract. Add wet ingredients to dry and gently stir together until combined. Be careful not to over mix.
  2. Spray a muffin pan with nonstick spray. Spoon batter evenly into 8 spots in the muffin tin. Mix all cinnamon swirl ingredients together. Divide evenly between each muffin and swirl into batter.
  3. Bake for about 12-15 minutes or until a knife comes out clean. Make sure to check often because different ovens will vary.
  4. Once done cooking, let cool. Mix icing ingredients. Top with icing and enjoy!
