Healthy and delicious cinnamon roll protein muffins filled with a cinnamon swirl and topped with vanilla coconut butter icing to make the perfect guilt-free cinnamon roll.

Ingredients
Cinnamon Muffins
1 cup (80g) old fashioned oats
¾ cup (90g) flour (oat or whole wheat)
6 tbsp. granulated/preferred sweetener
1½ tsp. cinnamon
1 tsp. baking powder
2 large eggs
½ cup natural applesauce
¼ cup milk (any milk is fine)
1 tbsp. oil
1 tsp. vanilla extract
Cinnamon Swirl Mixture
1 tbsp. coconut oil, melted
2 tbsp. brown sugar
1 tsp. cinnamon
Icing
2 tbsp. vanilla coconut butter
1 tbsp. milk (any milk is fine)
sweetener to taste
Instructions
Preheat oven to 350F. Mix oats, flour, sweetener, cinnamon, and baking powder in a bowl. In a separate bowl, mix eggs, applesauce, milk, oil, and vanilla extract. Add wet ingredients to dry and gently stir together until combined. Be careful not to over mix.
Spray a muffin pan with nonstick spray. Spoon batter evenly into 8 spots in the muffin tin. Mix all cinnamon swirl ingredients together. Divide evenly between each muffin and swirl into batter.
Bake for about 12-15 minutes or until a knife comes out clean. Make sure to check often because different ovens will vary.
Once done cooking, let cool. Mix icing ingredients. Top with icing and enjoy!
