Fluffy chocolate french toast with a hint of cinnamon layered with peanut butter cream and topped with melted dark chocolate, chocolate chips, and crushed peanuts.

Serves: 1 large serving
Ingredients
3 slices whole wheat (or sprouted grain) bread
1 whole egg
1 egg white
¼ cup almond milk
1 tbsp. unsweetened cocoa powder
½ tbsp. granulated sweetener
½ tsp. cinnamon
⅓ cup vanilla Greek yogurt
1 tbsp. peanut flour*
1½ tbsp. dark chocolate chips
½ tbsp. crushed peanuts (optional)
Instructions
Preheat pan or griddle to medium/high heat. In a bowl, whisk together egg, egg white, milk, cocoa powder, sweetener, and cinnamon.
Spray pan with nonstick spray. One at a time, dip each side of bread into egg mixture. Cook for about 2-3 minutes per side. Repeat with remaining two slices of bread.
Once french toast is cooked, mix vanilla Greek yogurt with peanut flour to make peanut butter cream. Melt 1 tbsp. of chocolate chips in the microwave.
Layer French toast with peanut butter cream. Drizzle with melted chocolate. Top with remaining chocolate chips and crushed peanuts. Enjoy!
Notes
*If you don’t have peanut flour, you can just regular peanut butter.
