Chocolate Peanut Butter French Toast

Fluffy chocolate french toast with a hint of cinnamon layered with peanut butter cream and topped with melted dark chocolate, chocolate chips, and crushed peanuts.

Ingredients
  • 3 slices whole wheat (or sprouted grain) bread
  • 1 whole egg
  • 1 egg white
  • ¼ cup almond milk
  • 1 tbsp. unsweetened cocoa powder
  • ½ tbsp. granulated sweetener
  • ½ tsp. cinnamon
  • ⅓ cup vanilla Greek yogurt
  • 1 tbsp. peanut flour*
  • 1½ tbsp. dark chocolate chips
  • ½ tbsp. crushed peanuts (optional)
Instructions
  1. Preheat pan or griddle to medium/high heat. In a bowl, whisk together egg, egg white, milk, cocoa powder, sweetener, and cinnamon.
  2. Spray pan with nonstick spray. One at a time, dip each side of bread into egg mixture. Cook for about 2-3 minutes per side. Repeat with remaining two slices of bread.
  3. Once french toast is cooked, mix vanilla Greek yogurt with peanut flour to make peanut butter cream. Melt 1 tbsp. of chocolate chips in the microwave.
  4. Layer French toast with peanut butter cream. Drizzle with melted chocolate. Top with remaining chocolate chips and crushed peanuts. Enjoy!
Notes
*If you don’t have peanut flour, you can just regular peanut butter.
