These pumpkin peanut butter protein muffins are packed with a warm cinnamon pumpkin flavor combined with peanut butter to make a healthy and delicious snack for any time of the day.

Ingredients
  • ¾ cup white/whole wheat flour
  • 1 scoop Beast Sports vanilla protein powder
  • ½ tsp. cinnamon
  • 1 tsp. baking soda
  • pinch of salt
  • 1 cup canned pumpkin puree
  • ½ cup natural creamy peanut butter
  • ¼ cup unsweetened almond milk
  • 1 tbsp. melted coconut oil
  • 2 whole eggs
  • ¼ cup + 2 tbsp. agave syrup*
Instructions
  1. Preheat oven to 350F. Add all ingredients to a large bowl except for baking soda and coconut oil.
  2. Gently stir together with a fork until a smooth, thick batter forms.
  3. Add baking soda and coconut oil. Fold into batter until combined.
  4. Spray a muffin tray with nonstick spray. Spoon batter into all 12 spots in the muffin tray evenly.
  5. Bake for 15-18 minutes or until a knife comes out clean. Let cool and enjoy!
Notes
*May want more or less depending on how sweet you like them.
