1 whole egg
½ tsp. vanilla extract
½ cup chocolate chips
3 tbsp. Christmas sprinkles
Instructions
Preheat oven to 375F. Add flour, protein powder, baking powder, cinnamon and salt to a large bowl. Mix.
In a separate bowl, add greek yogurt, maple syrup, melted coconut oil, milk, egg, and vanilla extract. Mix.
Slowly add wet ingredients to dry while stirring. Fold together until all combined. Be careful not to over mix.
Add chocolate chips and sprinkles. Gently stir into the batter.
Evenly spoon batter into 9 non-stick muffin liners. Bake for about 15-18 minutes or until a knife comes out clean. Better off baking a little less than a little more so that they don’t dry out.
