It is that time of year again. The time when the grocery stores carry pumpkin spice everything. From oatmeal, to poptarts, to cereal, to coffee, to yogurt, and everything in between. I may or may not have picked up a box of pumpkin spice mini wheat’s cereal :). I’m not complaining though. I definitely love the flavor of pumpkin. So after seeing a store full of pumpkin, and buying a couple cans of pumpkin puree, I had to make some pumpkin protein French toast sticks.
For the egg mixture; I did all my normal ingredients of egg, egg white, milk, protein powder, and cinnamon. However, this time, of course I had to add some pumpkin in there as well. It helps keep the French toas super moist and fluffy after it is cooked. You just have to cook it a little longer on each side than you normally might for French toast because of the pumpkin in there as well.
The recipe makes 9 French toast sticks, or about 3 servings. Each serving has 13 grams of protein thanks to the MusclePharm cinnamon bun combat powder I used. The cinnamon bun flavor went perfectly with the fall pumpkin theme. And, I almost forgot to mention, each serving has over 5 grams of fiber depending on the bread you use.
I happen to really enjoy the flavor of pumpkin, but it is also a superfood packed with nutrients. Each 1/2 cup serving has only 50 calories, 4 grams of fiber, and %200 of your daily vitamin A. Because it’s so healthy, I went ahead and made a creamy maple pumpkin sauce to dip the French toast sticks in. It is definitely the perfect recipe to start October!

Pumpkin French Toast Sticks
- 3 slices whole wheat bread
- 1/2 scoop (17g) MusclePharm cinnamon bun combat protein powder (or other whey protein powder)
- 1 whole egg
- 1 egg white
- 1/4 cup pumpkin puree
- 6 tbsp. milk (any milk is fine)
- 1/2 tsp. cinnamon (more or less to taste)
- 1 tbsp. granulated stevia or erythritol
Maple Pumpkin Sauce
- 1/4 cup pumpkin puree
- 1/4 cup vanilla Greek yogurt
- 2 tbsp. maple syrup (any is fine)
- stevia/sweetener to taste
Instructions
- Preheat a large pan or griddle to medium/high heat. In a bowl or small baking dish, whisk together egg, egg white, milk, pumpkin, cinnamon, stevia, and protein powder. Soak each slice of bread on both sides in egg mixture.
- Spray pan with nonstick spray. Cook each piece for about 3-4 minutes or until golden brown. May need more or less time depending on how hot your cooking surface is. It will take a little longer to cook than typical French toast.
- Once cooked, take French toast out of pan and set aside. Mix all maple pumpkin sauce ingredients together in a small bowl.
- Slice each piece of French toast into 1/3’s to make a total of 9 French toast sticks. Drizzle with extra maple syrup and did in maple pumpkin sauce. Enjoy!
