Every year on Christmas my grandma makes a whole bunch of fudge. There is peanut butter fudge, chocolate fudge, chocolate fudge with nuts, and then rocky road fudge. By the end of the day, everyone is about in a fudge coma!
Since pretty much everyone loves fudge, I figured it would be perfect make a fudge that you won’t feel guilty about eating a whole plate 0f. I didn’t end up going with any of the flavors that my grandma usually makes. I opted for one of my favorite combos. Chocolate and coconut.Ā I will eat just about anything that is chocolate coconut flavored.
The best part about this fudge is how healthy it is for you. When is the last time you had fudge with more fiber than sugar? That is all thanks to the base of the fudge using black beans. Yes, you heard correctly. Fudge made from black beans.
I was lucky enough to have Sweet-It send me some of their amazing sweeteners. They are high fiber and no sugar. I used the vita fiber syrup in this fudge to help boost the fiber. Each slice has a whopping 6 grams of fiber and only 4 grams of sugar.
I even managed to sneak some protein in each slice by putting a scoop of Musclepharm chocolate milk casein protein. Casein helped absorb the liquid and give a good fudge consistency.
Healthy Chocolate Coconut Fudge

Description
Healthy chocolate coconut fudge packed with fiber and very low in sugar. About 1/2 the calories and way more nutrients than your typical fudge.
Ingredients
- 1 can (240g drained) reduced sodium black beans
- 1/4 cup (20g) dark cocoa powder
- 1 scoop (31g) Musclepharm chocolate milk casein protein
- 1/4 cup (56g) coconut oil
- 1/4 cup 100% pure maple syrup*
- 3 tbsp. sweet-it vita fiber syrup*
- 1/4 cup divided (20g), unsweetened flaked coconut
- 1 tsp. coconut extract
Instructions
- Drain black beans and rinse very well. Add black beans, cocoa powder, casein protein, maple syrup, vita fiber syrup, and coconut extract. Blend until smooth.
- Heat coconut oil for about 30 seconds in a microwave to melt. Pour melted coconut oil in to food processor. Blend again until smooth. Add 3 tbsp. of flaked coconut and leave 1 tbsp. for later.
- Blend until flaked coconut is well incorporated and there are no clumps. Line a 6×8 baking dish with wax paper or foil.
- For thicker fudge use a smaller size baking dish. Press fudge into baking dish and flatten with a knife or your hands.
- Sprinkle remaining 1 tbsp. of flaked coconut evenly on top. Press gently into batter with hand. Freeze for at least 2 hours to let completely set. Slice into 12 pieces.
Notes
* Maple syrup can be subbed for honey or agave.
* If you do not have sweet-it vita fiber, you can just use more maple syrup, honey, or agave.
