I have been wanting to make another bread recipe this week, but it takes quite a bit of time to make bread by the time you are all said and done with it. I’m pretty busy right now preparing to leave on Thursday for a couple of cycling races in New York, so I decided to make a quick recipe last night. I found a couple of mini loaf dishes and decided to make a few easy mini banana chocolate chunk protein loaves.
There were so many things I liked about this recipe. I’m not sure where to begin. I used glass mini loaf baking dishes so that I could microwave them. They only took about 2:30 to 3 minutes to be completely cooked! You could also bake them, but I liked how quickly I could begin eating since they were done so quick.
The recipe makes two mini loaves. Each one has just over 300 calories which is crazy considering the size of each one. Also, they each have 24 grams of protein thanks to the Musclepharm protein powder I used. I went with cinnamon bun combat powder in this recipe, but vanilla would taste awesome as well!
I was pretty hungry last night when I made these, so I might have ended up eating both! It is pretty hard not to scarf it down when you pair sweet Amber Lyn sugar free milk chocolate chunks with delicious ripe banana. I kind of wish I didn’t eat both so that I would have another one to eat tonight. I guess I may just have to make the recipe again.

Description
Healthy banana chocolate chunk protein mini loaves. They are super easy and can be made in the microwave in just a few minutes.
Ingredients
- 1/2 cup (60g) whole wheat flour
- 1 scoop (34g) Musclepharm vanilla or cinnamon bun combat powder
- 2 tbsp. (12g) coconut flour (or peanut flour)
- 2 tbsp. granulated stevia or erythritol
- 3/4 tsp. baking powder
- 1/4–1/2 cup milk (any kind is fine)
- 1 large whole egg
- 1/4 cup (61g) pumpkin puree
- 1/4 cup (56g) plain nonfat Greek yogurt
- 1/2 small ripe banana (50g)
- 1/4 tsp. vanilla extract
- 1 tbsp. (14g) Amber Lyn milk chocolate chunks
Instructions
- Mix flour, protein powder, coconut flour, stevia and baking powder in a medium bowl. Mash banana until smooth. Add milk, egg, pumpkin, mashed banana, and vanilla extract to a separate bowl. Add wet ingredients to dry and gently mix until well combined.
- Fold in chocolate chunks. Pour batter into two microwave safe mini loaf dishes. Slice remaining banana and place on top of each. Microwave for 2:30 to 3:00 or until a knife comes out clean. Do not over cook or it will dry out.
- Let cool for a few minutes and enjoy!
Notes
They could also be baked in the oven. I have never tried baking them, but I would suspect that it would take about 15-20 minutes on 350F.
