I was thinking about the cinnamon rolls that my brother, sister and I would eat before school when we were younger. They were always such a delicious way to start the morning before going to school. I think just the three of us would easily eat 12 cinnamon rolls, which for 3 little kids was a lot. Now, I could probably eat all 12 by myself!
I decided to sort of remake the cinnamon roll flavor by making some cinnamon roll protein muffins. They definitely weren’t the same as a gooey warm cinnamon roll, but they were pretty dang good and much healthier. Each one has just over 100 calories including the icing.
I used my cinnamon bun combat powder in the batter of the muffins. I also made a cinnamon mixture to swirl into the batter. I made it out of cinnamon, coconut sugar (or brown sugar), and coconut oil. You could leave it out, but it really enhanced the cinnamon roll flavor.
The muffins also needed some sort of icing. It just wouldn’t be like a true cinnamon roll without the icing. I wanted to make it a cream cheese icing, but I was out of cream cheese. So, I just decided to make a pretty simply icing with Greek yogurt, maple syrup, and stevia.

Muffins
- 3/4 cup (90g) whole wheat flour
- 1 1/2 scoops (50g) MusclePharm cinnamon bun combat protein powder
- 1/2 cup granulated stevia or erythritol
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 cup (113g) plain nonfat Greek yogurt
- 1/2 cup (113g0 natural applesauce
- 1 whole egg
- 2 tbsp. milk (any milk is fine)
Cinnamon Swirl
- 1 tbsp. (14g) coconut oil, melted
- 1 tbsp. (12g) coconut sugar (or brown sugar)
- 1 1/2 tsp. cinnamon
Icing
- 2 tbsp. (30g) plain nonfat Greek yogurt
- 2 tbsp. maple syrup
- 1/2 tbsp. granulated stevia or erythritol
Instructions
- Preheat oven to 350F. Mix flour, protein powder, stevia, cinnamon, baking powder, and baking soda in a large bowl. In a separate bowl, add Greek yogurt, applesauce, egg, and milk. Mix.
- Combine wet and dry ingredients. Gently mix together until combined. Be careful not to over mix. Pour batter evenly into 9 muffin liners.
- In a small bowl, mic melted coconut oil, coconut sugar and cinnamon. Add about 1 tsp. on top of each muffin. Swirl into batter.
- Bake for 12-13 minutes or until a knife comes out clean.
- Mix icing. Top with icing and enjoy!
