If you have never had baked oatmeal, I highly suggest making it. It is such a great alternative to your typical morning oatmeal and really easy to grab and go. I decided to go with banana chocolate chunk baked oatmeal bars for this recipe because I had quite a few bananas to use up before leaving for spring break in Florida.
My dad had been wanting me to make some more baked oatmeal for a while, so I finally answered his request. He really loved my blueberry banana baked oatmeal cups, so I figured it was perfect to use up some extra bananas and make them banana flavored since you can never go wrong with banana.
Believe it or not, I was actually going to make these into baked oatmeal cups, but I still have not been able to find my darn muffin pan. I just went with baked oatmeal bars instead, and I have to say that I was not disappointed.
You just can’t go wrong with banana and chocolate. I have quite a stock of Amber Lyn chocolates in my pantry now, so I use them up whenever I get a chance. I even sometimes add a few of the chocolate chunks into my coffee and let them melt to give it a delicious mocha flavor. I have come to find out that I pretty much like chocolate in anything.
These baked oatmeal bars not only taste amazing, but they are also packed with protein. I used my MusclePharm vanilla combat protein powder and Greek yogurt to boost the protein content and flavor. You can’t beat a recipe that is healthy, delicious, and full of protein. I will definitely be making another variation of these bars soon.

Description
Moist banana protein baked oatmeal bars filled with delicious chocolate chunks. These healthy bars are perfect for a quick breakfast.
Ingredients
- 2 cups (80g) old fashioned oats
- 1 and 1/3 scoops (45g) MusclePharm vanilla combat protein powder
- 1/4 cup granulated stevia or erythritol
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 2 large (230g) ripe bananas
- 1 large whole egg
- 1/2 cup plain nonfat Greek yogurt
- 2 tbsp. unsweetened almond milk
- 1/2 tsp. vanilla extract
- 1/3 cup (85g) Amber Lyn sugar free dark chocolate baking chunks, chopped
Instructions
- Preheat oven to 375F. In a large bowl, mix oats, protein powder, stevia, cinnamon, and baking powder. In a separate bowl, add peeled ripe bananas and microwave for about 30 seconds to soften. Mash bananas with a fork. Add Greek yogurt, egg, almond milk, and vanilla extract. Mix until smooth. Add wet ingredients to dry and gently mix together until combined. Fold in chopped dark chocolate chunks.
- Spray a 6×8 baking dish with nonstick spray or line with parchment paper. Pour batter into baking dish and bake for 15-20 minutes or until a knife comes out clean. Mine were done at about 18 minutes. Once done cooking, take out of oven and let completely cool for about 45 minutes. Slice into 8 bars and enjoy.
