This morning I had a smoothie with lots of frozen berries in it. It has been a while since I have had one, and I forgot how good mixed berries are. I decided that I wanted more, so I decided to make some mixed berry chocolate chunk protein baked oatmeal. Berries and chocolate go so well together. Well, I guess almost anything goes well with chocolate!
These sweet and delicious baked oatmeal cups are just what I needed after a really tough past few days of riding this weekend. I did 65 miles on Thursday, 100 miles on Friday, and 80 miles today! My legs are definitely tired after all of that! I guess there is no better way to help fatigue than a protein packed and nutritious treat.
I tried this recipe out a couple days ago in a single serve version. It tasted great, but I was out of eggs so it just crumbled apart after baking. Thank goodness I had eggs this time. It is kind of funny how often my recipes do not turn out how I like. They do not always turn out like the glamorous pictures you see on my website!
Berry Chocolate Chip Protein Baked Oatmeal

Ingredients
- 2 cups (160g) old fashioned oats
- 2 scoops (67g) MusclePharm vanilla combat protein powder
- 1/4 cup + 2 tbsp. granulated stevia or erythritol
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 cup (113g) plain nonfat Greek yogurt
- 1/4 cup + 2 tbsp. (90g) canned pumpkin
- 1/2 cup milk (any milk is fine)
- 1 whole egg
- 3/4 cup (105g) frozen mixed berries
- 1/4 cup (42g) dark chocolate chips + more for topping
Instructions
- Preheat oven to 400F. Mix oats, protein powder, stevia, cinnamon, and baking powder in a large bowl. In a separate bowl, mix egg, yogurt, pumpkin, and milk. Combine wet and dry ingredients. Gently stir together until smooth.
- Add chocolate chips and frozen mixed berries. Fold into batter. Spray a jumbo muffin tin or 5 ramekins with nonstick spray. Pour batter evenly into 5 spots in the jumbo muffin tin or ramekins. Bake for 18-20 minutes or until a knife comes out clean.
- Once cooled, melt some extra dark chocolate chips and drizzle over the top. Enjoy!
