Mmm I am hungry just thinking about them. Delicious banana bread flavored baked oatmeal filled with blueberries. You will find out that oatmeal is a pretty common occurrence at my house.
I am all for oatmeal. Whether it is a bowl of oatmeal, oatmeal pancakes, oatmeal bars, or baked oatmeal. I just gotta have my oatmeal. I probably eat oatmeal for breakfast at least 364 days out of the year. And the other day, I am wishing I was eating oatmeal.You really can’t go wrong with it. Heck, I eat it for dinner a lot of the time.
There is nothing better than coming home from a long cold ride and then making a huge bowl of warm oatmeal. There is just something about it I can’t get enough of. And if I don’t have time to cook a bowl of oatmeal, I have these baked oatmeal cups that make it easy for me to get my oatmeal fix. All I have to do is just grab one and go.
These were just perfect. All the perfect breakfast flavors wrapped up in one little cup. Blueberries and bananas are full of nutritious vitamins. The oats have fiber to keep you full and help lower cholesterol. It is really a perfect meal.

Ingredients
Oatmeal Cups
- 1 and 1/2 cups (120g) old fashioned oats
- 1 scoop (34g) Musclepharm vanilla combat protein powder
- 3 tbsp. granulated stevia
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 whole egg*
- 1/2 cup unsweetened almond milk
- 2 tbsp. sugar free maple syrup
- 1 tsp. vanilla extract
- 1 large (150g) ripe banana
- 1 cup (140g) fresh or frozen blueberries
Instructions
- Preheat oven to 375F. Add oats, protein powder, stevia, cinnamon and baking powder to a bowl. Mix until combined. Peel banana and slice in half. Mash half of banana in a separate bowl and leave the other half to the side. To the bowl with mashed banana, add egg, unsweetened almond milk, maple syrup, and vanilla extract. Mix well. Add wet ingredients to dry and stir until combined. Add blueberries and fold in until evenly distributed. Spray a muffin pan with cooking spray. Pour batter evenly into 8 spots in muffin pan. Slice remaining banana into 8 slices. Add a slice to the top of each oatmeal mixture. Bake for about 15-20 minutes or until a knife comes out clean. Mine took closer to 20 minutes to be cooked.
Notes
*Egg can be substituted for a flax egg and protein substituted for flour to make this recipe vegan.
