I have come to notice that almost all of my recipes are made after I get home from a bike ride and hungry. Well, this one was no different. I came home from my ride and decided on blueberry coconut protein oatmeal. I already had oatmeal for breakfast, but you can never go wrong with oatmeal, even for dinner.
We didn’t have just blueberries at the house, so I had to go through the frozen fruit bag and pick out a bunch of blueberries. It is ironic because I would always get mad at my sister when she would just eat a certain berry out of it, and now I am doing the same thing. But I guess sometimes you gotta do what you gotta do.
I ended up eating all of the oatmeal that the recipe made, but realistically it makes two good sized servings. My stomach is like a bottomless pit sometimes. Actually, it is a bottomless pit all of the time. Sometimes when I am ordering at a restaurant, the waitress gives me a look that says “You are really going to eat all that?” Every time I make sure to clean my plate. Eating is one thing that I don’t think I will ever have trouble with.
Anyway, enough of my rant about eating. This oatmeal was so delicious and definitely was a good way spruce up oatmeal which can sometimes be painfully boring. The blueberry and coconut flavors together were fantastic. I also added an egg white in during the cooking process. It add some more protein, and gives a much more creamy texture.
I added my vanilla combat powder as well which upped the protein per serving to 20 grams. Then I topped it with more blueberries, shredded coconut, and some vanilla cupcake coconut butter. The crunch from that shredded coconut was delicious!

Ingredients
Oatmeal
- 1 cup (80g) old fashioned oats
- 1 scoop (33g) Musclepharm vanilla combat protein powder
- 1 3/4 cup water (or milk if you prefer to cook oats in milk)
- 1 large egg white
- 1/2 tsp. coconut extract
- stevia to taste
- 1/3 cup (50g) fresh or frozen blueberries
Toppings
- 1 tbsp. (5g) shredded coconut
- 1 tbsp. (16g) Sweet Spreads vanilla coconut butter
- blueberries
Instructions
- Microwave oats in water for 3:30 to 4:00 minutes. Whisk in egg white and microwave for an additional 0:30 seconds. Add protein powder coconut extract, and stevia. Mix until incorporated. Fold in blueberries.
- Top oats with more blueberries, shredded coconut, and vanilla coconut butter. Split oatstwo servings and enjoy!
