Peanut butter marshmallow is not a combination that I normally have, but it is awesome. It reminded me of eating a fluffernutter. Peanut butter and marshmallowĀ go so well together. I might just have to make myself a fluffernutter sandwich after this reminded me how much I love this combination.
The majority of recipes that I make are after I have had a ride. I am hungry and usually want something sweet to refuel with. As I was finishing, I had peanut butter and marshmallow on my mind. Then I had to decide what I wanted to make. Oatmeal sounded good because oatmeal pretty much always sounds good to me.
The oats are peanut butter flavored. I used peanut flour in them to give the peanut butter flavor without adding a large amount of fat. I love using peanut flour in recipes.
To give the oats the protein I need to recover after a ride, I added in egg whites and Musclepharm vanilla combat protein powder. The vanilla was perfect because it sweetened the oats and took on the peanut butter flavor. Thanks to the egg whites and combat powder, this recipe had a whopping 45 grams of protein.
Besides the fact that it adds protein, I like to use egg whites in my oatmeal because it makes it really creamy and adds more volume. You just have to make sure that the egg whites are whisked in well so that you don’t have clumps of egg white after you cook. I have made that mistake before!

Creamy peanut butter marshmallow protein oatmeal. A base of peanut butter protein oats topped with a marshmallow fluff cream, mini marshmallows, natural peanut butter.
Ingredients
Peanut Butter Oatmeal
- 3/4 cup (60g) old fashioned oats
- 1 scoop (34g) Musclepharm vanilla combat protein powder
- 2 tbsp. (12g) peanut flour
- 2 large egg whites
- Cinnamon to taste
Marshmallow Cream
- 1/3 cup (75g) plain nonfat Greek yogurt
- 1 tbsp. marshmallow fluff
- 1/2 tbsp. sugar free white chocolate pudding mix
Instructions
- Cook oats in microwave or on stove top as directed on oats container. Once cooked, whisk in two egg whites. Make sure egg whites are whisked in well so that there are no clumps og cooked egg white after microwaving. Microwave for 30-45 seconds.
- Add protein powder, peanut flour and cinnamon if desired. Mix well.
- In a small bowl, mix plain Greek yogurt, marshmallow fluff, and sugar free pudding mix. Put mixture into a small plastic bag. Cut end off and pipe marshmallow cream on top of oatmeal.
- Top with more peanut butter for an even better peanut butter flavor.
