So there is a problem that I find myself running in to quite a bit. I always have extra bananas and then I need to use them before they start attracting fruit flies. I guess it is a pretty good problem to have because bananas are delicious. I had been day dreaming about pancakes while at school and decided that I wanted to make fluffernutter protein pancakes. When I got home I noticed the extra bananas and figured there was no better flavor to make than banana fluffernutter protein pancakes.
These pancakes really hit the spot. Well, pancakes pretty much always hit the spot. If you haven’t noticed already, I kinda like pancakes. Just a little bit though. It’s not like an obsession or anything. Ok, well maybe it is, but it I am not ashamed. With the way these pancakes tasted, I think anyone would become a pancake addict like me.
Have you ever had a fluffernutter sandwich? If not, you really need to. It is quite a life changing experience when you first have one. I mean seriously. What is not to like about peanut butter and marshmallows? Putting this amazing flavor combination into protein pancakes was one of my better ideas.
I pretty much just stuck to my typical pancake recipe with a few changes. I used Musclepharm vanilla combat protein powder and then I added peanut flour to give them the peanut butter flavor without adding extra fat. I layered the pancakes with banana. The sauce is a probably the best part about this recipe. It is a delicious peanut butter marshmallow sauce. Then I added some Nutty by Nature protein peanut butter and mini marshmallows. And that is why fluffernutters are life changing.
It has been a pretty good week so far. I had these pancakes, and today my dad and I are driving down to Georgia. I have a bike race in Clermont, Georgia. I can’t wait to get back outside and race again. Ever since I got back from Arizona I have been stuck inside on the trainer due to this terrible Indiana weather. It won’t be quite as warm as it was out there, but at least it will be about 60 degrees. That is much better than the 10 degree weather we have had in Indiana.
Let’s just hope these pancakes will fuel me through my races this weekend!

Description
Fluffy peanut butter protein pancakes layered with banana and topped with peanut butter marshmallow sauce, protein peanut butter, and mini marshmallows.
Ingredients
Peanut Butter Pancakes
- 1/2 cup (60g) whole wheat flour
- 1 scoop (33g) Musclepharm vanilla combat protein powder
- 2 tbsp. (12g) peanut flour*
- 1/2 tsp. baking powder
- 1/2 tbsp. stevia or granulated erythritol
- 1/4 cup plain nonfat Greek yogurt
- 1/4 cup + 1 tbsp. unsweetened almond milk
- 1 large whole egg
Peanut Butter Marshmallow Sauce
- 1 tbsp. (6g) sugar free white chocolate pudding mix
- 1 tbsp. marshmallow fluff
- 1 tbsp. (6g) peanut flour
Extra Toppings
- 2 tbsp. (32g) Nutty by Nature Protein Peanut Butter
- 1/2 small banana
- mini marshmallows (optional)
Instructions
- Preheat pan or griddle to medium/high heat. In a large bowl, mix whole wheat flour, protein powder, peanut flour, stevia and baking powder. In a separate bowl, add milk, egg, and Greek yogurt. Mix well until smooth.
- Add wet ingredients to dry. Gently mix together until well combined. Be careful not to over mix. Spoon batter onto griddle to make 4 medium sized pancakes. Cook for about 3-4 minutes per side.
- While pancakes are cooking, make peanut butter marshmallow sauce. Mix sugar free white chocolate pudding mix with enough water to make a thin sauce consistency. Add marshmallow fluff and peanut flour and mix until smooth.
- Slice banana and layer pancakes with sliced banana. Top with peanut butter, peanut butter marshmallow sauce, and mini marshmallows.
