This whole recipe was actually super quick and easy. I just used some amazing Pumped Up Pancakes buttermilk protein pancake mix. I literally added water, blueberries and a little stevia for extra sweetness.
The perfect golden brown. I love it when they turn out this good.
To be honest, I actually did not start off planning to make blueberry chia pancakes. I knew I wanted blueberry pancakes, but I needed a way to jazz them up. Not that plain pancakes aren’t good, because pretty much all pancakes are good. It was obvious that I needed something to top them with. You can’t just leave a beautiful stack of pancakes bare like that.
I thought of a chia jam that I have seen people make before and decided that would be the perfect thing to to the pancakes with. For not ever making it before, it turned out pretty dang good. All you need are some frozen blueberries (not sure if fresh would work or not), chia seeds, and some maple syrup if you like to sweeten it a little like me.
You can simply never go wrong with pancakes. Especially not fluffy blueberry pancakes for that matter.
Blueberry Chia Protein Pancakes

Fluffy blueberry Pumped Up Protein Pancakes topped with blueberry chia jam.
Ingredients
Pancakes
- 3/4 cup (83g) buttermilk Pumped Up Protein Pancakes mix
- 2/3 cup water*
- 1/3 cup (50g) blueberries
- 1/2 tbsp. granulated stevia (optional)
Blueberry Chia Jam
- 1/3 cup (50g) frozen blueberries
- 1 tbsp. sugar free maple syrup
- 1/2 tbsp. (7g) chia seeds
- Stevia to taste
Instructions
- Preheat pan or griddle to medium/high heat.
- Mix pumped up pancake mix with water. Add stevia and mix. Fold in blueberries.
- Spoon batter on to griddle to make 4 even sized pancakes. Cook for about 3 minutes per side.
- For chia jam, add blueberries, sugar free maple syrup and optional stevia to a bowl. Heat for 30-45 seconds until blueberries are warm.
- Mash a little bit with a fork, then add chia seeds and mix. Let sit for 5-10 minutes in the fridge to let chia seeds absorb liquid and thicken.
- Top pancakes with blueberry chia jam.

* May need more or less water depending on desired thickness.
