Buttermilk pancakes just have such a good flavor. You almost don’t need syrup or anything. Actually, who am I kidding? You always need syrup or something on top no matter how good the pancakes are. This combo was awesome.
One of my new favorite pancake mixes has to be Kodiak Cakes. I used their buttermilk protein pancake mix for these, and they were just amazing. You all know me and my chocolate obsession. I had to add some sugar free dark chocolate chunks to the batter. A little chocolate never hurts.
Just look at how fluffy these babies were. And that oozing melted dark chocolate. Mmmm that is what one might call perfection.
That peanut butter on top just added to the deliciousness. Peanut butter is another ingredients that it never hurts to have. Is there such things as too much flavor? No, there is never too much flavor in my book.

Description
Fluffy buttermilk Kodiak Cakes protein pancakes filled with dark chocolate chunks. Topped with natural peanut butter and a drizzle of maple syrup.
Ingredients
Pancakes
- 3/4 cup (80g) Kodiak Cakes buttermilk pancake mix
- 3/4 cup water*
- 1 tbsp. (14g) Amberlyn Chocolates sugar free dark chocolate chunks
Toppings
- 1 tbsp. maple syrup
- chocolate chunks
- natural peanut butter
Instructions
- Preheat pan or griddle to medium/high heat. Mix Kodiak cakes mix with water or other desired liquid. Fold in chocolate chunks.
- Spoon batter on to griddle to make 4 even sized pancakes. Cook for about 3 minutes per side.
- Top with more chocolate chunks, natural peanut butter and maple syrup.

* Can also use coffee or milk instead of water.
