It is weird, but I have actually really started to love the taste of coffee. Many people think it is weird when they see a 16 year old drinking coffee. And don’t worry, it is not the pumpkin spice latte or sugar filled frappuccinos from Starbucks that I drink. Of course I add a little sweetener and some creamer. I’m not crazy enough to drink plain black coffee yet!
The logical think to do with my new found love for coffee was to make some coffee flavored pancakes. I used the cafe cream NutriWhey protein from NutriForce Sports. It has such a good coffee flavor and actually has some bits of ground coffee in it. Now that is serious.
And as you all probably know, my pancakes can never be plain. I had to add many toppings. First I added some healthy chocolate protein ice cream that I was lucky enough to try from Halo Top Creamery. This ice cream is seriously amazing. So rich and creamy yet it only has 4g of sugar and it even has 7g of protein. Now that is some ice cream I am willing to eat. Pretzels and blackberries were added on too, but who cares about that. Ice cream is what matters.
Coffee Protein Pancakes

Description
Coffee flavored protein pancakes using cafe cream protein powder. Topped with healthy chocolate ice cream, fresh blackberries, and crushed up pretzels.
Ingredients
- 1/2 cup + 2 tbsp. (75g) whole wheat flour
- 1 scoop (40g) cafe cream Nutriforce whey protein powder
- 1 tbsp. granulated stevia
- 1/2 tsp. baking powder
- 1/4 tsp.cinnamon
- 1/2 cup brewed coffee, cold or room temperature*
- 1 whole egg
- 1/4 cup (60g) canned pumpkin**
- 1/4 tsp. vanilla extract (optional)
Instructions
- Preheat pan or griddle to medium/high heat. In a medium bowl mix flour, protein powder, stevia, cinnamon and baking powder. In a separate bowl, mix coffee, egg, pumpkin and vanilla extract. Combine wet and dry ingredients and mix. Grease griddle with coconut oil or spray with cooking spray. Spoon batter on to griddle to make 4 even pancakes. Cook for about 3-4 minutes per side. Top with whatever you desire.
Notes
*Can sub for unsweetened almond milk or other milk but it will have less of a coffee flavor.
** Substitute for an equal amount of greek yogurt, mashed banana, or applesauce.
