This recipe was made a few days ago before my coach and I left for Richmond, Virginia to do some training and watch the cycling world championships. After these past 4 days of not being at home being able to make my beloved pancakes again, I am really missing them. I can’t wait to get back home and probably make this exact recipe again. It was that good!
Obviously, since they are cookie dough protein pancakes, they need cookie dough. You could either use the cookie dough from my cookie dough protein truffle recipe, or you could use my peanut butter chocolate chunk cookie dough recipe. They are both amazing!
It is kind of funny, but after looking at my last few recipes I realized that almost all of them involve chocolate chips and peanut butter of some sort. I didn’t even plan it, but since I am obsessed with chocolate and peanut butter it just kind of happens. So if you love chocolate chip cookies or any kind of cookie dough, you will absolutely love these fluffy protein pancakes!
Cookie Dough Protein Pancakes

Description
Fluffy chocolate chip protein pancakes topped with healthy protein cookie dough, toffee crunch peanut butter, and a drizzle of melted dark chocolate.
Ingredients
- 1/2 cup (60g) whole wheat flour
- 1 scoop (34g) MusclePharm vanilla combat protein powder
- 1 tbsp. granulated stevia or erythritol
- 1/2 tsp. baking powder
- 1 whole egg
- 1/4 cup (56g) plain nonfat Greek yogurt
- 1/4 cup milk (any milk is fine)
- 1/4 tsp. butter extract*
- 1 tbsp. chocolate chips, divided
- 2 tbsp. healthy protein cookie dough
- 2 tbsp. peanut butter (optional)
- drizzle of maple syrup (optional)
Instructions
- Preheat pan or griddle to medium/high heat. Mix flour, protein powder, stevia, and baking powder. In a separate bowl, mix egg, Greek yogurt, milk, and butter extract in a separate bowl.
- Combine wet and dry ingredients and gently fold together until a thick batter forms. Stir in 1/2 of the chocolate chips.
- Spray griddle with nonstick spray. Spoon batter onto griddle to make 4 even sized pancakes. Cook for about 2-3 minutes per side.
- Melt the remaining chocolate chips in the microwave. Top pancakes with peanut butter, healthy protein cookie dough, melted chocolate and a drizzle of maple syrup. Enjoy!
Notes
* Butter extract can be substituted for vanilla extract, but it will not have quite as much of the buttery cookie dough flavor.
