I really love oreos. I could probably eat them until sickness. Seriously. There is nothing better than dipping oreos in milk. At least that is what I thought until I made these delicious cookies and cream protein pancakes. They satisfied the craving to eat a bunch of oreos, and they are healthy too. Iād say that is a win-win.
These had some serious cookies and cream flavor going on. I used Musclepharm cookies and cream combat protein powder in the pancakes and then added cocoa powder to give them some of the chocolate cookie flavor. I layered the pancakes with a vanilla cream greek yogurt filling. Then I topped them with piecesĀ of Musclepharm’s cookie dough combat bar.
If you like oreos, then these are most likely the dream pancakes you have been looking for all of your life. What is not to love about a protein packed breakfast that tastes like oreos? Or in my case dinner. Yes, I am weird like that. I eat breakfast for dinner most of the time.
They were my dinner from last night. I got done riding my bike and I had a craving for none other than pancakes. Since I am on my way to Arizona today for a bike race, I knew I had to make some pancakes before I left since I wouldnāt be able to make any for a few days. I guess you can always get a stack of pancakes from a restaurant, but they are probably not quite as healthy as these.
It will definitely be nice to get out of the cold Indiana winter and be able to ride in the sun and warmth for a few days. I canāt wait for summer to come. I have decided that I really am not a fan of the cold weather. I think Iāll be migrating to the south for winter when I get older. That way I can enjoy my pancakes in the warmth!

Description
Moist and fluffy chocolate cookies and cream protein pancakes layered with vanilla cream filling and topped with cookie dough protein bar pieces and healthy chocolate sauce.
Ingredients
Cookies and Cream Pancakes
- 1/2 cup (60g) whole wheat flour
- 1 scoop (35g) Musclepharm cookies & cream protein powder
- 1 1/2 tbsp. (8g) dark cocoa powder
- 1 tbsp. granulated stevia or erythritol
- 1/2 tsp. baking powder
- 1/2 cup unsweetened almond milk (or any other milk)
- 1/4 cup (62g) canned pumpkin, NOT pie filling*
- 1 large whole egg
- 1/2 (31g) Musclepharm cookie dough combat protein bar
Vanilla Cream Filling
- 1/2 cup plain nonfat Greek yogurt
- 1 tbsp. (6g) sugar free vanilla pudding mix
- 1 tbsp. granulated stevia or erythritol
Chocolate Sauce
- 1 tbsp. (5g) dark cocoa powder
- 2 tbsp. sugar free maple syrup
Instructions
- Preheat pan to medium/high heat or griddle to 350F. In a bowl, mix together flour, protein powder, cocoa powder, stevia, and baking powder. In a separate bowl, mix together pumpkin, egg, and almond milk.
- Combine wet and dry ingredients and gently mix together until combined. Be careful not to over mix.Spoon batter onto griddle to make 4 even sized pancakes. Cook for about 3-4 minutes per side .
- Mix together greek yogurt, pudding mix and stevia to make vanilla cream filling. Mix cocoa powder and sugar free syrup to make chocolate sauce.
- Layer pancakes with vanilla cream. Chop protein bar into chunks. Top pancakes with combat bar chunks and drizzle with chocolate sauce.
Notes
* Pumpkin can be substituted for an equal amount of Greek yogurt, mashed banana, or applesauce.

I’d love to know the brands you’re using for the cookies and cream pancakes. The 1/2c of whole wheat flour is 50g of carbs by itself! What am I missing here? My ingredients had the nutrition at roughly 600 cal, 51 protein, 81 carbs, 14 fat. I’d really like to try these, but the carb count is just too high.

Made these and they came out so dry. Used greek yogurt instead of pumpkin, do you think that would make it or break it?

I guess it could, but it normally hasn’t made them dry for me. Did you use whey protein powder? My protein is a blend so it doesn’t dry out like whey protein does. Also, cooking time matters because food with protein powder can dry out quickly! I hope that helps!
