Some days you just need a good ol’ stack of pancakes. Well let’s be honest, I pretty much need pancakes every day. :) Half the time I have pancakes, they are for dinner. Yes, I eat pancakes for dinner. Try it, and you will know what happiness truly is.
Since I can’t get enough chocolate, I just used double the chocolate for these pancakes. Just about every part of these pancakes has some kind of chocolate. White chocolate, dark chocolate, just give me chocolate and I am a happy man.
For the pancakes, I used Mancakes mix. It is super easy to use. All you have do to is just mix a 1:1 ratio of mix with milk, coffee, or water. I also added a bit of stevia and cocoa powder to get a good chocolate taste,and then the white chocolate chunks in the batter. I topped them with white chocolate pudding sauce, more white chocolate chunks, and some dark chocolate dreams peanut butter.

Ingredients
Pancakes
- 3/4 cup (105g) Mancakes mix
- 1 tbsp. (5g) cocoa powder
- 1 tbsp. stevia
- 3/4 cup milk, water or coffee
- 14g Amberlyn Chocolates sugar free white chocolate chunks
Toppings
- 2 tbsp. (8g) sugar free white chocolate pudding mix
- White chocolate chunks
- Dark chocolate peanut butter
Instructions
- Preheat pan or griddle to medium high heat. Mix mancakes mix with water. Add cocoa powder and stevia. Mix well. Chop chocolate chunks into smaller pieces. Fold in chocolate chunks. Spoon batter onto griddle to make 4 medium sized pancakes. Cook for about 3-4 minutes per side. Mix pudding mix with water until a pudding consistency. Top with pudding, more white chocolate chunks and dark chocolate peanut butter.

All extra toppings are optional. They will taste great either way.
