Pancakes are always one of my favorites. When in doubt, I will probably make pancakes. It can’t be a bad thing though when they are protein packed and healthy. I could definitely justify eating pancakes everyday. They can and are healthy if you make them right.
This time I had white chocolate on my mind. White Chocolate Protein Pancakes it was going to be. Super moist and fluffy white chocolate chip pancakes layered with white chocolate greek yogurt cream. But, it gets even better. Topped with more white chocolate chips and white chocolate peanut butter from Peanut Butter & Co.
White Chocolate Protein Pancakes

Description
White chocolate chip protein pancakes layered with white chocolate cream. Topped with more white chocolate chips and white chocolate peanut butter.
Ingredients
Dry Ingredients
- 1/2 cup (60g) whole wheat flour
- 1 scoop (34g) @musclepharm cinnamon bun combat protein powder
- 1 tbsp stevia
- 1/2 tsp baking powder
- cinnamon to taste
- 1/2 tbsp (7g) white chocolate chips
Wet Ingredients
- 1 egg
- 1/4 cup (61g) canned pumpkin (applesauce, yogurt, mashed banana, etc.)
- 1/4 cup + 2 tbsp unsweetened almond milk
- White Chocolate Cream:
- 1/3 cup (75g) plain greek yogurt
- 1 tbsp (8g) sugar free white chocolate pudding mix
Instructions
- Preheat pan or griddle to medium/high heat. Mix all dry ingredients except for white chocolate chips in a bowl. Mix wet ingredients in a separate bowl. Add dry ingredients to wet and mix until well combined. Spoon batter onto griddle to make even pancakes. Cook for about 3 minutes per side.
- Mix greek yogurt with white chocolate pudding mix to make white chocolate cream. Layer pancakes with mixture. Top with white chocolate peanut butter, more white chocolate chips and maple syrup (optional)
