Even though I am not very old, these rice crispy treats brought me back to when I was younger. I would always have a delicious rice crispy treat for a snack. Quite honestly, I forgot how much I really love rice crispy treats.
About a month agoĀ when I was at Whole Foods I grabbed some brown rice syrup and brown rice cereal. I intended to make some rice crispy treats that weekend. Well I never got around to it. I looked in my pantry and saw that I had the ingredients. I no doubt had to make some.Ā
These are not your typical refined sugar filled and no nutritional value rice crispy treats. The brown rice syrup was a perfect alternative to marshmallow. These actually turned out much better than I had expected.
To give them a little extra nutritional boost, I added a scoop of Musclepharm vanilla casein protein. You could use regular whey protein, or completely omit if you don’t want it.
To top it off with a little extra flavor, I had to add some melted chocolate. I used sugar free milk chocolate from Amber Lyn Chocolates. This milk chocolate is seriously awesome. It added the perfect touch to the peanut butter flavored rice crispy.
Peanut Butter Rice Crispy Treats

Description
Peanut butter rice crispy treats with no refined sugar and an added boost of protein. Plus a sugar free milk chocolate drizzle on top. A treat that everyone knows and loves, but made healthy.
Ingredients
- 4 cups (160g) crisp brown rice cereal
- 1/2 cup + 2 tbsp. brown rice syrup
- 1 scoop Musclepharm chocolate casein protein*
- 1/3 cup (85g) natural creamy peanut butter
- 2 tbsp. (28g) Amber Lyn Chocolates sugar free milk chocolate chunks
- 1 tsp. (4g) coconut oil
Instructions
- In a large bowl add brown rice cereal and protein powder. Mix well so that cereal and protein powder is combined.
- In a separate microwave safe bowl, add brown rice syrup and peanut butter. Microwave for 30 seconds. After heating, whisk together brown rice syrup and peanut butter.
- Pour syrup/peanut butter mixture over brown rice and protein powder mixture. Mix very well until all combined and the consistency of a rice crispy treat.
- Press mixture into a 9×9 baking dish lined with parchment paper. Use another piece of parchment paper to flatten and level the the rice crispy into the dish.
- Cool in the fridge for 30-45 minutes.
- Microwave coconut oil and sugar free milk chocolate in a small bowl for 30 seconds. Mix the coconut oil and chocolate together. Drizzle chocolate over rice crispy treats and cut into 16 pieces.
Notes
* The casein protein powder can be subbed for any other protein powder such as whey, or it can be omitted completely.
