My mom got me a good Belgian waffle maker not too long ago. I have loved it. The waffles are so thick and delicious. I definitely recommend a Belgian waffle maker over other types of waffle makers. You will not be disappointed.
There is something about coconut and chocolate that I can’t get enough of. These waffles had such great coconut flavor. And the chocolate chunks really hit the spot. I topped them with a Greek yogurt coconut cream and a chopped up dark chocolate coconut protein bar from Pure Protein.
I will definitely be making this recipe again soon. They were so easy and delicious.

Description
Coconut chocolate chunk protein waffles topped with Greek yogurt coconut cream and pieces of dark chocolate coconut protein bar.
Ingredients
Dry Ingredients
- 3/4 cup (90g) whole wheat flour
- 1 scoop (33g) Musclepharm vanilla combat protein powder
- 1 tbsp granulated stevia
- 1/4 tsp cinnamon
- 1/2 tsp baking powder
- 28g chocolate chunks
Wet Ingredients
- 1/4 cup (60g) canned pumpkin
- 1/2 cup unsweetened almond milk
- 1 whole egg
- 1 tsp coconut extract
Coconut Cream
- 1/4 cup (56g) plain Greek yogurt
- 1 tbsp. unsweetened almond milk
- 1/2 tbsp. stevia
- 1/4 tsp. coconut extract
Instructions
- Preheat waffle iron to medium/high heat. Mix all dry ingredients except for chocolate chunks. Mix wet ingredients in a separate bowl.
- Fold chocolate chunks into batter. Spray waffle iron with cooking spray. Pour batter into waffle iron. Cook for about 4-5 minutes or until waffle says it is done.
- Mix all coconut cream ingredients. Top with coconut cream and dark chocolate coconut protein bar pieces (optional). Makes 2 servings. 2 waffles per serving.
Notes
For the waffles, use less than 1 tsp. coconut extract if you don’t want as strong of a coconut taste. Also add more or less stevia depending on how sweet you like it.
