I guess I just really needed another fall recipe. It is getting to be my favorite time of the year. First Thanksgiving, and then Christmas! I figured it doesn’t get more fall than the flavors of maple and pumpkin together. I even managed to get some chocolate in there.
It all starts with the perfect golden brown maple pumpkin waffles. Man, I really love thick fluffy Belgian waffles. How could you resist?
I topped them with some homemade pumpkin butter and maple chocolate sauce. I can pretty much figure out how to fit some sort of chocolate in any recipe. :)
Don’t worry, the recipe makes plenty of pumpkin butter to top each waffle with its own generous portion. You can’t ever skimp on flavor!
Maple Pumpkin Protein Waffles

Moist and fluffy maple pumpkin protein waffles. Topped with pumpkin butter and chocolate maple sauce.
Ingredients
Maple Pumpkin Waffles
- 1 cup (120g) whole wheat flour
- 1 scoop (33g) Musclepharm cinnamon combat protein powder
- 1 tbsp. stevia
- 1/4 tsp. cinnamon
- 1/4 tsp. pumpkin pie spice
- 1/2 tsp. baking powder
- 1/2 cup (120g) canned pumpkin
- 1/2 cup + 2 tbsp. unsweetened almond milk
- 1 whole egg
- 1/2 tsp. maple extract
Chocolate Maple Sauce
- 1 and 1/2 tbsp. (8g) cocoa powder
- 3 tbsp. sugar free maple syrup
Pumpkin Butter
- 2 tbsp. (30g) pumpkin
- 1 tbsp. (16g) natural peanut butter*
- Stevia to taste
Instructions
- Preheat waffle iron to medium/high heat. Mix flour, protein powder, stevia, baking powder, cinnamon, and pumpkin pie spice in a bowl. Mix pumpkin, almond milk, egg, and maple extract in a separate bowl.. Combine wet and dry ingredients. Spray waffle iron with cooking spray. Pour batter into waffle iron. Cook for about 4-5 minutes. In a small bowl, mix cocoa powder, and sugar free maple syrup to make chocolate maple sauce. In another bowl, mix peanut butter, pumpkin and stevia to make pumpkin butter. Top with chocolate maple sauce and pumpkin butter. Makes 2 servings. 2 waffles per serving.
Notes
* Can sub any nut butter for peanut butter.
