Healthy Protein Brookies (Brownie + Cookies)

Is it a brownie? Is it a cookie? The answer is all of the above. It sounds amazing right? Yeah, I know. That is because it is amazing. What is not to love about combining two of the best desserts ever into one insanely delicious and healthy dessert. The bottom layer, as you can see is a chocolate chip cookie layer while the top is a moist and decadent protein brownie layer.

I just recently got a shipment of protein from True Nutrition. They were kind enough to send me some free product. They sent me some rice protein and pea protein. I have been experimenting with vegan proteins so I can broaden my spectrum and audience of my recipes.

This particular recipe used the chocolate brownie rice protein. They rice protein comes out with a similar texture to casein protein. So, if you don’t have rice protein, you can use casein. That is what I love about the rice protein. It doesn’t have the dairy of casein, but it is still a high quality protein that leaves the end product moist and delicious.
Healthy Protein Brookies
Healthy Protein Brookies (Brownie + Cookies)

Serves: 12 brookies
These protein brookies are the perfect combinations between a chewy chocolate chip cookie and a decadent brownies. They are also made with all healthy ingredients!
Ingredients
  • Cookie Layer
  • 1 1/2 cups oat flour
  • 1/2 cup brown rice flour (or more oat flour)
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 2 tbsp. maple syrup
  • 2 tbsp. almond butter
  • 2 tbsp. coconut oil
  • 2 tbsp. brown sugar
  • 1 tsp. vanilla extract
  • 1/3-1/2 cup chocolate chips
  • Brownie Layer
  • 3/4 cup oat flour
  • 1/4 cup cocoa powder
  • 1 scoop (35g) True Nutrition chocolate brownie rice protein powder
  • 1/4 tsp. salt
  • 1/2 cup milk (I used almond)
  • 3 tbsp. coconut oil
  • 1/4 cup agave syrup (or maple syrup)
  • 2 tbsp. natural peanut butter
  • 3 tbsp. chocolate chips, melted
Instructions
  1. Preheat oven to 350F. Mix all cookie dry ingredients in a bowl. In a separate bowl, melt coconut oil and add the rest of the cookie wet ingredients. Combine wet and dry cookie layer ingredients. Batter will be thick and crumbly.
  2. Spray a 6×9 baking pan with nonstick spray. Press cookie layer into the bottom of the pan.
  3. Now, mix all brownie layer dry ingredients in a large bowl. In a separate bowl, melt coconut oil and chocolate chips. Add remaining wet ingredients to melted coconut oil and chocolate chips. Mix until smooth.
  4. Combine wet and dry brownie ingredients. Spread brownie layer over top of cookie layer. Bake for about 20 minutes or until a knife comes out clean.
  5. Cut into 12 bars and enjoy!
