If I could only have one candy in the world for the rest of my life, it would without a doubt be peanut butter cups. They are perfect. Of course, you can’t ever go wrong with something that has chocolate and peanut butter in it. So, I decided to add my favorite treat to some healthy and protein packed blondies. The end result was these Peanut Butter Cup Protein Blondies!
If you have seen many of my protein brownie recipes, you have probably seen that I use black beans in them typically. Beans in dessert? I know, it sounds weird but they taste amazing. So, for those one since they are blondies, I used garbanzo beans in the recipe instead of black beans. They do the same thing as black beans do in the brownie recipes. They add extra protein and fiber, and help give a nice dense texture.
Of course, I had to have some peanut butter in these. They can’t be peanut butter cup protein blondies without some extra peanut butter can they? However, the peanut butter flavor didn’t only come from peanut butter. I also used some BSN Syntha-6 peanut butter cookie flavored protein powder. Wow, it actually tastes like a peanut butter cookie!
Another thing I really like about recipes like this is that they are quick and easy to make. You literally just have to blend up everything in a food processor, pour it in the pan, and bake in the oven. After adding the batter to the pan, I pressed some peanut butter cups into the top. You can also just mix them straight into the batter if you prefer that.
All the peanut butter lovers out there are sure to absolutely love these. And if you don’t like peanut butter then we might not be able to be friends, ha! I’m kidding, but not really. Peanut butter is AMAZING!
Peanut Butter Cup Protein Blondies

Description
These peanut butter cup protein blondies are the perfect combination of creamy, salt peanut butter flavor combined with chocolate peanut butter cups on top for an amazing, protein-packed blondie recipe.
Ingredients
- 1 can garbanzo beans (drained and rinsed)
- 1 cup oat flour
- 4 scoops BSN Peanut Butter Cookie Syntha-6 protein powder
- 1/3 cup Truvia baking blend*
- 1/2 cup natural creamy peanut butter
- 1/2 cup plain Greek yogurt**
- 2 whole eggs
- 2 tbsp. melted coconut oil (or grass fed butter)
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 6 peanut butter cups (chopped)
Instructions
- Preheat oven to 350F.
- Add all ingredients except for peanut butter cups to a food processor or powerful blender. A food processor works better. Process until a smooth batter is formed.
- Line a 9×9 baking pan with foil. Spray with non-stick spray. Pour batter into pan.
- Chop peanut butter cups into small pieces. Sprinkle peanut butter cups over top of blondie batter. Press slightly into batter.
- Bake for about 15 minutes. Check at about 12 minutes to keep from over-baking. They turn out better if you pull out of the oven when they still look a little underdone. This prevents them from drying out and makes them stay more moist.
- Once baked, let cool then cut into 16 squares. Enjoy!
Notes
*Truvia baking blend is a sugar/stevia blend. It has half the sugar of regular granulated sugar, but is sweeter so you don’t need to use as much. It can be found in the baking aisle of most groceries. If you can’t find it, you can use 1/2 a cup of regular white granulated sugar.
**Cottage cheese, mashed banana, applesauce, or canned pumpkin can all be substituted for the Greek yogurt, however it will alter the macros off the recipe.
