I don’t know about you guys, but I was never a huge pop tart person growing up. Now, give me an oatmeal cream pie and I’m in heaven. But, now I think I have grown to enjoy the delicious pop tarts and how many awesome flavors their are. Of course, I always think the homemade ones that are thicker and packed with more filling are way better. But that’s just me. So, what did I do? I made Pumpkin Pie Protein Poptarts.
Pumpkin Pie Protein Poptarts
Like I said, homemade pop tarts are always better than regular ones. You can’t beat the flaky crust, much more filling, and simply just the satisfaction of enjoying one with a cup of coffee. But, as you know, I can’t have a delicious dessert without trying to make it protein-packed and macro-friendly. So, that is exactly what we did here.
More than just a pop tart…
Believe it or not, this can also be tuned into a delicious protein pumpkin pie, so stay tuned for that. But, it is really just as easy as rolling out all the dough into a pie dish, adding the pumpkin filling, which you may need to make double the recipe to fill out the whole pie, and bake! Anyways, that will be coming later this month / early next month.
Versatile dough
Like I mentioned above, just as the pop tart dough can be used for a pumpkin pie, you can also go crazy with the filling for this pop tart. Want a blueberry pop tart? Go for it. Or maybe you are feeling a strawberry one? No problem. You could even go all in with a s’mores one!
One of the keys to this recipe is to brush the tops and edges with a little bit of egg wash. It will help it get crispy and brown without having to use butter in the dough. It helps keep them super macro-friendly and amazingly delicious!

Description
These pumpkin pie protein pop tarts combine a flaky, low-fat crust with delicious protein pumpkin pie filling and pumpkin vanilla glaze.
Ingredients
Crust
1 cup (120g) all purpose flour
⅔ cup (150g) plain, nonfat Greek yogurt
Pinch salt
1 tbsp (10g) Swerve granular sweetener*
¼ tsp pumpkin pie spice
2 tbsp egg whites (to brush the tops with)
Filling
1 cup (240g) pumpkin puree
1 scoop (34g) Macro Supps ONE Protein, vanilla ice cream
¼ cup (40g) Swerve granular sweetener*
½ tsp vanilla extract
½ tsp pumpkin pie spice
¼ tsp cinnamon
Pinch salt
Icing
1 scoop (34g) Macro Supps ONE Protein, vanilla ice cream
2 tbsp (30g) pumpkin puree
3 tbsp unsweetened almond milk (may need slightly more or less if you use a different protein powder)
¼ tsp vanilla extract
Instructions
- Preheat the oven to 375F.
- Add all crust ingredients to a large bowl. Mix. Once it begins to combine, place on a floured surface and knead together until incorporated. Roll out to about ¼ inch thick. Cut into 6 rectangles. May need to fold together and roll out again to get all 6.
- In a separate bowl, add all pumpkin pie filling ingredients. Mix together until smooth and combined. Add about 2-3 tbsp of filling to the center of 3 of the rectangles of dough. Pull / stretch the other 3 rectangles of dough slightly. Lay each one over one of the others already topped with pumpkin filling.
- Use a fork to crimp the edges and seal in the filling. Brush the tops with egg white (which will help them get golden brown when they bake).
- Bake at 375F for 25-30 minutes or until golden brown. Let cool and enjoy!
Notes
*Swerve is a sugar free sweetener that tastes, measures and bakes like sugar but without any of the calories or insulin response. It can be found in the baking aisle of most grocery stores or on Amazon.
