Fall is here. Bring on all the warm, cinnamon, apple pie inspired recipes. Here is a little something I made when I was craving apple pie, but I was also really craving a slice of cake. Hmm. That sounds like a predicament right? Nope, I made this Caramel Apple Protein Mug Cake.
I made this one into a recipe video. I have been doing videos lately for Ascent Protein, and I have really enjoyed doing them. I did the chocolate chip casein protein cookies and lemon raspberry protein muffins.

Description
Super easy, protein packed caramel apple mug cake using casein protein powder. Filled with juicy apples and then topped with more apple and a drizzle of caramel sauce!
Ingredients
Mug Cake
- 1/4 cup oat flour (or whole wheat flour)
- 1 scoop Ascent Vanilla/Cappuccino casein protein powder*
- 1/2 tsp. baking powder
- 1/4 tsp. cinnamon
- pinch of salt
- 1 whole egg
- 1/4 cup vanilla Greek Yogurt
- 1/2 cup milk (I used unsweetened almond)
- 1/8 tsp. caramel extract (optional, but delicious)
- 1/4 apple (chopped)
Toppings
- more chopped apple
- caramel sauce for topping (sugar free for lower calories!)
Instructions
- Add flour, protein powder, baking powder, cinnamon and salt to a bowl. Stir.
- Now add egg, vanilla yogurt, 1/4 cup milk (other 1/4 cup will be used later). Mix again until a thick batter forms. Add remaining milk and stir again until smooth.
- Add chopped apple and fold into batter.
- Spray a mug with nonstick spray. Add batter to mug.
- Microwave for 1.5 minutes. Check, and then microwave for another 30 seconds to 1 minute depending on microwave. Be careful not to overcook.
- Top with more chopped apple and a drizzle of caramel sauce. Enjoy!
Notes
*Both vanilla and cappuccino work well in this recipe. I actually used cappuccino because I think the light coffee flavor goes well in this recipe, but vanilla will be delicious as well. MUST use casein protein. If dairy free, pea protein will work similarly.
