Maple Brown Sugar Mug Cake

Whenever I am kind of in a rush but want a really tasty and healthy dessert, I pretty much always go for a mug cake. They are so versatile and can be made pretty much any way you like them. This time, I decided to make a maple brown sugar mug cake.

When I started making this last night, I really had no intention of posting the recipe. I was just putting some ingredients together in hopes of making a healthy and delicious dessert. Well, it turned out so good that I had to share the recipe.

  Maple Brown Sugar Mug Cake
The cake is maple flavored. All I did was add a little maple extract and cinnamon to give it the warm maple flavor. Then, I decided to top it with maple coconut butter. And to finish it off, I got a little crazy and added a bit of brown sugar and a drizzle of pure maple syrup. I know brown sugar might not be considered healthy, but there isn’t very much of it and trust me it makes this cake way better!

This maple flavored protein cake is not only moist but it is also healthy and delicious. To add to the flavor it is topped with maple coconut butter, brown sugar, and a drizzle of pure maple syrup!
Ingredients
  • Mug Cake
  • 6 tbsp. oat flour (or whole wheat flour)*
  • 1/2 tsp. baking powder
  • 1 tbsp. granulated sweetener of choice
  • cinnamon to taste
  • 1/4 cup canned pumpkin**
  • 2 tbsp. milk (any milk is fine)
  • 1 whole egg
  • 1/8 tsp. maple extract (more if you want a stronger maple flavor)
  • Toppings
  • 1 tbsp. maple coconut butter
  • 1 tsp. brown sugar
  • 1 tbsp. pure maple syrup
Instructions
  1. Mix flour, sweetener, cinnamon, and baking powder in a bowl. Add pumpkin, egg, milk, and maple extract. Mix until a smooth batter forms.
  2. Spray a large mug with nonstick spray. Pour batter into the prepared mug.
  3. Microwave for a minute and a half. Check, then microwave for another 30 seconds if it needs to be cooked more.
  4. Top with maple coconut butter, brown sugar and maple syrup. Enjoy!
Notes
* A scoop of protein and 2 tbsp. of oat flour can be used to make it a protein mug cake.[br]** Pumpkin can be substituted for an equal amount of mashed banana, applesauce, or yogurt.
