PB&J Thumbprint Cookies

Tomorrow is the last day of racing here in New Mexico. It will be nice to be back home and get back to my baking ways for a while until the next race! These are some PB&J thumbprint cookies that I made before leaving. I really wish I had some of them here with me!  PB&J Thumbprint Cookies

PB&J Thumbprint Cookies
It was my first time ever making thumbprint cookies. Wow. I think I have fallen in love with them. Everyone loves a good peanut butter and jelly sandwich. But, I think the combination might be even better in a cookie.

  PB&J Thumbprint Cookies

The cookies are some delicious peanut butter protein cookies. If you don’t want to make them with protein, you can just use extra flour instead. Then I made a thumbprint in each of them and filled them with some scrumptious strawberry jam.

Serves: 20 cookies
These peanut butter and jelly thumbprint cookies are just like having a good ol’ PB&J sandwich but even better! You can’t beat a peanut butter cookie filled with scrumptious strawberry jam!
Ingredients
  • 3/4 cup (90g) oat flour
  • 1 scoop vanilla protein powder (or another 1/4 cup flour)
  • 1/2 tsp. baking powder
  • 1 tbsp. coconut oil, melted
  • 1 whole egg
  • 1 tsp. vanilla extract
  • 1/4 cup natural creamy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup strawberry jam
Instructions
  1. Mix flour, protein powder and baking powder in a bowl. Add egg, melted coconut oil, vanilla extract, peanut butter, and brown sugar in a separate bowl. Whisk until smooth. Add wet ingredients to dry and fold together until a thick cookie dough forms.
  2. Roll into about 20 balls. Flatten out onto a cookie sheet using thumb to make an imprint in the middle. Fill each cookie with about 1/2 tbsp. jam. Bake for about 10 minutes.
  3. Let cookies completely cool and enjoy!
