I think this was definitely the perfect recipe for Halloween. First, it had the perfect colors and flavors. Second, it helped fight off those vicious cravings to eat your weight in candy.
I am a huge fan of cake donuts. These were protein chocolate cake donuts drizzled with a pumpkin peanut butter icing. Yes I said pumpkin peanut butter icing. It was amazing.
That chocolate taste was just phenomenal. Using Musclepharm’s chocolate milk combat protein powder just made them a home run. Not to mention they were packed with protein and other goodness. Why fry a donut when you can bake something just as good in the oven?
Lastly, since I had extra batter and did not have a large enough pan to make 8 donuts, I made 6 donuts and this delious single serve chocolate pumpkin protein cake.

Description
Moist protein packed chocolate cake donuts topped with pumpkin peanut butter icing.
Ingredients
Donuts
- 3/4 cup (90g) whole wheat flour
- 1 scoop (34g) Musclepharm cinnamon bun protein powder
- 1/4 cup + 2 tbsp. (30g) cocoa powder
- 1/4 cup + 1 tbsp. cup granulated stevia
- 1 tsp. pumpkin pie spice
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 cup + 1 tbsp. unsweetened almond milk
- 1 flax egg (1 tbsp. flax + 3 tbsp. water)
- 1 cup (240g) canned pumpkin, NOT pie filling
- 2 tbsp. (42g) light agave syrup
- 1 tsp. vanilla extract
Icing
- 2 tbsp. (35g) canned pumpkin
- 2 tbsp. (32g) natural creamy peanut butter
- 1 tbsp. sugar free maple syrup
- 1 tbsp. stevia
Instructions
- Preheat oven to 350F.
- Mix flour, protein powder, cocoa powder, stevia, pumpkin pie spice, baking soda, and baking powder in a bowl.
- Mix 1 tbsp. flax with 3 tbsp. water and let sit for at least 5 minutes to thicken.
- Add unsweetened almond milk, flax egg, pumpkin, agave syrup and vanilla extract to a separate bowl. Mix well.
- Add dry ingredients in to wet and mix until combined. Do not over mix.
- Spray a donut pan with cooking spray. Spoon batter evenly into 8 donuts spots or 6 donuts and 2 muffins. Bake for about 13 minutes or until a knife comes out clean.
- While donuts are cooling, start making icing. Donuts need to be completely cooled before adding icing. I waited about 30 minutes.
- In a medium bowl, mix pumpkin, peanut butter, maple syrup and stevia. Add batter to a plastic bag or piping bag. Cut a small portion off one of the corners. Squeeze icing in a zig-zag pattern over donuts.
Notes
I cooked mine as 6 donuts and and then a single serve cake that was about the size of 2 donuts.
