Serves: 11 cookies
Ingredients
  • ¾ cup (190g) peanut butter*
  • 1 scoop (34g) vanilla whey protein powder
  • 1 scoop (30g) vanilla casein protein powder
  • ¼ cup (48g) stevia/brown sugar baking blend**
  • 2 large whole eggs
  • 1 tsp. vanilla extract
  • ½ cup (30g) mini marshmallows
Instructions
  1. Preheat oven to 350F. Add all ingredients except for marshmallows to a bowl. Mix until well until a thick cookie dough forms. May need to heat up peanut butter slightly to soften it to it can be mixed easier.
  2. Scoop cookies evenly into 11 cookie dough balls. Flatten each cookie and place a couple mini marshmallows in the middle. Form dough back into a ball around the marshmallows. Repeat for the remaining cookies.
  3. Place cookies on a baking sheet lined with parchment paper. Flatten cookies slightly. Bake for 4-5 minutes at 350F. Cookies may seem a little soft, but they will harden once cooled.
Notes
* I used protein peanut butter to boost the protein in the recipe. Any peanut butter, or nut butter will be fine to use.
** If you don't have the stevia brown sugar blend, you can use ½ cup regular brown sugar.
