Warm pumpkin protein baked oatmeal filled with 3 types of chocolate chips. It has a delicious cinnamon spice flavor perfect for fall.

Ingredients
  • 1 cup (80g) old fashioned oats
  • ⅔ scoop (23g) vanilla whey protein powder
  • 2 tbsp. granulated stevia or erythritol
  • ¼ tsp. pumpkin pie spice
  • ¼ tsp. cinnamon
  • ½ tsp. baking powder
  • ½ cup (122g) pumpkin puree (NOT pie filling)
  • 5 tbsp. milk (any milk is fine)
  • 1 whole egg
  • ½ tsp. vanilla extract
  • ½ tbsp. (10g) dark chocolate chips
  • ½ tbsp. (10g) white chocolate chips
  • ½ tbsp. (10g) pumpkin chips (or more white or dark chocolate chips)
Instructions
  1. Preheat oven to 400F. Mix oats, protein powder, stevia, pumpkin pie spice, cinnamon, and baking powder in a bowl. In a separate bowl mix pumpkin, milk, egg, and vanilla extract. Combine wet and dry ingredients. Fold in chocolate chips.
  2. Spray a glass mini loaf pan or oven safe bowl with nonstick spray. Pour batter into loaf pan. Sprinkle with a few extra chocolate chips on top.
  3. Bake for about 30 minutes or until a knife comes out clean. Let cool, cut into two pieces and enjoy!
