Maple White Chocolate Chip Protein Muffins

Moist and fluffy maple protein muffins filled with white chocolate chips. These protein muffins pack 12 grams of protein making them the prefect healthy and delicious snack!

Ingredients
  • 1¼ cup (150g) whole wheat flour
  • 1 scoop (31g) vanilla whey protein powder
  • 1 scoop (34g) vanilla combat protein powder
  • 6 tbsp. granulated stevia or erythritol
  • 1½ tsp. baking powder
  • 1 tsp. cinnamon
  • 1 cup (227g) vanilla Greek yogurt
  • 1 whole egg
  • ¼ cup milk (any milk is fine)
  • ¼ cup pure maple syrup
  • 1 tsp. vanilla extract
  • ½ tsp. maple extract
  • 2 tbsp. (35g) white chocolate chips
Instructions
  1. Preheat oven to 350F.
  2. Mix flour, protein powder, stevia, baking powder, and cinnamon. In a separate bowl mix Greek yogurt, egg, maple syrup, milk, vanilla extract, and maple extract.
  3. Combine wet and dry ingredients. Gently fold together until a thick batter forms. Fold in ½ of the white chocolate chips. Spray a muffin tin with nonstick spray. Scoop the batter into 8 spots in the muffin tin.
  4. Sprinkle the remaining chocolate chips over the top of each muffin. Bake for about 12-14 minutes or until a knife comes out clean. Enjoy!
