Berry Protein Oatmeal Squares

These healthy and delicious berry protein oatmeal squares have an awesome cake-like texture and make for the perfect grab-and-go breakfast!

Ingredients
  • 2 cups old fashioned oats
  • 1 scoop (34g) Beast Sports vanilla protein powder
  • 1 tsp. cinnamon
  • ¼ tsp. baking powder
  • a few pinches of salt
  • ½ cup Greek yogurt*
  • 2 whole eggs
  • ½ cup + 2 tbsp. milk (I used unsweetened almond)
  • 2 tbsp. coconut oil (melted)
  • ¼ cup stevia/brown sugar baking blend**
  • 1 tsp. vanilla extract
  • 1 cup frozen mixed berries
Instructions
  1. Preheat oven to 350F. Mix oats, protein powder, cinnamon, baking powder and salt in a large bowl. In a separate bowl, whicks together yogurt, eggs, milk, melted coconut oil, brown sugar, and vanilla extract.
  2. Add wet ingredients to dry. Gently fold together until evenly combined. Stir in frozen mixed berries.
  3. Line an 8x8 square cake pan with foil. Spray with nonstick spray. Bake for 20 minutes or until a knife comes out clean.
  4. Cut into 12 squares and enjoy!
Notes
* Greek yogurt can be substituted for mashed banana, canned pumpkin puree, or applesauce. It can also be substituted for any other type of yogurt.
** Stevia/brown sugar baking blend can be substituted for ½ cup of regular brown sugar.
