Mix oats, coconut, protein powder, and cinnamon in a large bowl.
Add peanut butter, coconut oil, maple syrup, and milk into a pan. Heat on medium heat while continually stirring.
Combine wet and dry ingredients. Mix together until well incorporated and a sticky mixture is formed. Press mixture into a 6x8 baking dish lined with foil.
Put in fridge to set for about 5-6 hours or overnight.
Drizzle melted chocolate over top and sprinkle with extra shredded coconut.
Cut into 8 bars and enjoy!
