Coconut Chocolate Chip Protein Bars (No Bake)

Moist and dense coconut chocolate chip no bake oatmeal protein bars that are soft and full of amazing nutrients and flavor.

Ingredients
Bars
  • 3 cups (180g) old fashioned oats
  • 1 scoop (34g) Beast Sports vanilla protein
  • 1 scoop (30g) vanilla casein protein
  • ¼ cup (30g) unsweetened shredded coconut
  • ½ tsp. cinnamon
  • ¼ cup pure maple syrup
  • ¼ cup (56g) coconut oil
  • 6 tbsp. (96g) natural creamy peanut butter
  • ¾ cup milk (any milk is fine)
  • ¼ cup (60g) carob chips (or dark chocolate chips)
  • 1 tsp. vanilla extract
  • 1 tsp. coconut extract
Topping
  • shredded coconut
  • melted chocolate chips
Instructions
  1. Mix oats, coconut, protein powder, and cinnamon in a large bowl.
  2. Add peanut butter, coconut oil, maple syrup, and milk into a pan. Heat on medium heat while continually stirring.
  3. Combine wet and dry ingredients. Mix together until well incorporated and a sticky mixture is formed. Press mixture into a 6x8 baking dish lined with foil.
  4. Put in fridge to set for about 5-6 hours or overnight.
  5. Drizzle melted chocolate over top and sprinkle with extra shredded coconut.
  6. Cut into 8 bars and enjoy!
