1 cup (240g) canned pumpkin puree (NOT pumpkin pie filling)
2 whole eggs
¼ cup stevia/sugar baking blend*
¼ cup granulated stevia/erythritol**
½ tbsp. vanilla extract
2 tbsp. (28g) dark chocolate chunks
2 tbsp. (28g) milk chocolate chunks (or more dark chocolate)
Instructions
Preheat oven to 350F. Mix flour, protein powder, baking powder, baking soda, cinnamon, and salt in a large bowl. In a separate bowl, mix together mashed banana, pumpkin, eggs, stevia/sugar blend, granulated stevia, and vanilla extract.
Combine wet and dry ingredients. Gently fold together until a smooth batter forms. Be careful not to overmix. Add chocolate chips, leaving a few extra for the top. Stir in chocolate chunks.
Spray a 4x8 in loaf pan with nonstick spray. Spoon batter into pan. Sprinkle top with remaining chocolate chunks. Bake for about 35 minutes or until a knife inserted comes out clean.
Notes
* If you don't have the stevia/sugar baking blend, sub with ½ cup regular granulated white or brown sugar. ** If you don't have this, sub for above stevia/sugar baking blend or ½ cup regular sugar. But, it will give the recipe more sugar.
