These peanut butter and jelly thumbprint cookies are just like having a good ol' PB&J sandwich but even better! You can't beat a peanut butter cookie filled with scrumptious strawberry jam!

Serves: 20 cookies
Ingredients
¾ cup (90g) oat flour
1 scoop vanilla protein powder (or another ¼ cup flour)
½ tsp. baking powder
1 tbsp. coconut oil, melted
1 whole egg
1 tsp. vanilla extract
¼ cup natural creamy peanut butter
½ cup brown sugar
½ cup strawberry jam
Instructions
Mix flour, protein powder and baking powder in a bowl. Add egg, melted coconut oil, vanilla extract, peanut butter, and brown sugar in a separate bowl. Whisk until smooth. Add wet ingredients to dry and fold together until a thick cookie dough forms.
Roll into about 20 balls. Flatten out onto a cookie sheet using thumb to make an imprint in the middle. Fill each cookie with about ½ tbsp. jam. Bake for about 10 minutes.
Let cookies completely cool and enjoy!
